Holy moly. Incredibly robust yet nuanced aromatics of white flower, fennel, and bread dough. Heavenly. I've never smelled this type of aroma in a sake before. Mr Winebow guy explains the special strain of yeast developed by Chokaisan is the culprit here. Mouthfeel is elegant. The taste and finish is has wonderful depth and complexity. This isn't close to an "essence of rainwater" daiginjo but more of a flaunting rich Corinthian leather one. We grabbed a few of these. Paired with strawberries. Decent enough but this sake needs no stinking pairing. (4169 views)

Wow, is this good stuff! It's big, bold, robust, dense and pretty much up in yer grill but there is a super lively acidity that is extremely cleansing. I definitely tasted the spirit on the first few sips but that faded away once the presence and persistence took over. We paired this the scallops crudo, tuna tataki, and cold sesame soba noodles and it worked with all with ease. (2234 views)

Holy moley! This is powerful stuff in both flavor profile and alcohol content (although it hides the 20.5% abv very well). It’s the antithesis of essence of rainwater. Yamahai and nama and genshu, oh my. Minyamanishiki rice milled to 67%, SMV 1, acidity 1.3 in a really balanced package. It’s huge, no getting around that. Serve it with grilled pork or even steak. But with the enormity of the flavor profile is some really profound complexity. Love this stuff. (2505 views)
