Chateaubriand in Paris: This is a sort of orange wine color, with pepper showing up and yeast and ash; fuller with some tannins, rich and earthy notes and red apple skin; Made in a monastery in clay amphorae (I was told "clay pots"). Funky. With Poulette cour d'armoise, liseron, tandoori (Tandoori baby chicken with flowers (Bindweed?)). next dish was Lait Ribot (buttermilk) with sureau (elderflower) paired with Sake Kaze No Mori.
