 Tasted by La Cave d'Argent on 4/28/2024 & rated 92 points: Dinner at Spago Beverly Hills (Beverly Hills, CA): This deep pink-colored Champagne was tasted from a bottle that had been disgorged during the month of September 2021. Pinot Noir-dominant (approximately 75%) and comprised entirely of Ambonnay Grand Cru fruit, it flaunts an lively small bead and an intense aromatic profile of strawberries, orange zest, lemon verbena, bread dough and wet stones. Medium-bodied and with lively acids, it delivers flavors in line with the aromas. Mouth-filling and energetic on the mid-palate, it concludes with a medium-to-long, saline-laden finish. This terrific non-vintage rosé should be at its best over the next 3-4 years. Drink now-2028. (253 views)
 Tasted by Bjweiss on 1/18/2024 & rated 91 points: This is an excellent champagne. Color is really lovely with an amber pink hue. On the nose, I get grapefruit, blood orange (lots of blood orange), yeast and a rocky chalky note as well. The palette matches the nose here, and adds in some intensely concentrated red fruits (strawberry and raspberry). Acidity is quite high, which I appreciate and dosage, while seemingly high on paper at 9/gl, is expertly judged. There’s a crispness to the wine that makes it a solid palette cleanser too. Finish is short to medium in length, which may be my only gripe here, but it’s a minor one. For the money, this is certainly over delivering.

Tight and tannic upon opening, this wine really blossomed with air, becoming progressively sweeter and more honeyed over time. Opulent notes of macerated strawberries, then strawberry jam, candied ginger, and ripe nectarines. But the most dominant note is brown sugar, which is simultaneously alluring and overpowering. This has enclosed very nicely for a 15 year wine. (783 views)

Similar flavors on the palate with just a hint of underlying toast but this wine was mostly about the juicy, delicious red fruit and florals. High acidity with a mouthwatering finish. Drink this in the campground in Tennessee has gobs of red Ambonnay fruit and a lovely tartness, reminds me of raspberries, apple skin, and wild strawberries. This is fragrant and fresh with red berries, cherries, fresh picked citrus notes, peaches, biscuits, rose petals, raspberries, minerals, red fruits, baking spice, toast, and some doughy tones. The Medium bodied feel is balanced and refined with crisp, high acidity. This was from a 5/19 disgorgement. This probably could develop a bit with another year or so, but this is meant to be drunk and it does a great job at that. (597 views)

(NV Henri Billiot Brut Rosé) ($68.00) Same base as the NV Brut, with still red PN from ’04-’05. Deep color for rosé. Disgorged 1/11 and showing explosive fruit; Billiot rosé after a month in the weight-room, and even with 9-10g/l of RS it seems drier than earlier renditions. Plumper fruit perhaps? This has nowhere to go but up.

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and A˙) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
