A little darker and softer on the nose than the 2006, but the palate is really just too green and sappy. Well enough made, but there’s just too much DMS running through this to drink more than the odd glass. Buy the 2006 instead. The palate is rich and savoury at the same time with a delicate interplay between ripe blackberry and earthy tannins. It gains momentum as it moves from start to finish and has an underlying saltiness that serves to add texture and contrast.
On the finish there is good length of olive and blackberry fruit.
The Stoney Vineyard represents the same exceptional quality as the Estate wine , with an incredibly good value price tag. The struture is 'medium' across the board; weight, acid, grainy tannins, length. It's a touch raw and greenish on the palate, but it's balanced along the tongue. Not quite the step up from the 2004 I was hoping for, but it's consistent with Domaine A's rather herbal style of cabernet, which is not for everyone... (2458 views) |

It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace.
