This sauvignon blanc has laser-like acidity mixed with limestone, grass, lime skin, and a splash of ruby grapefruit. The bouquet is a bit tight at first, but if you let the wine warm up slightly, it unfolds into something very compelling. I loved the texture created by the acidity and minerality, the wine really grips your palate and takes it for a ride. Wish I'd bought more, hopefully Garagiste re-offers it. Initially, acidity was perhaps slightly too aggressive, but that settles down with some air. Both nose and palate highlight a relatively sweet and fresh style of Sauv Blanc with nice florals. A bit of tannic dryness on the finish. I think this will continue to get better with time. If I had scored this when originally opened, it would have been somewhere around 86 points.
