 Tasted by drwine2001 on 1/19/2024: Oregon Trip-Day 1 (Here and there, Willamette Valley): Deep yellow. Medium weight. Average acidity, orange peel, and an excellent brothy saline back end. This seemed dull at first but perked up with several hours of air. (1015 views)
 Tasted by Seth Rosenberg on 12/7/2023 & rated 96 points: Powerful and wondeful nose. Iodine, kumquat, shells, sweet florals and orange blossoms. With a deep bass minerality with some funkiness &!green stems. Palate is crisp and energetic - tons of lemon, salty minerals. Great balance - really pinpoint. Waves and waves of yellow and mineral greatness. Finish is long and lemon and minerals. Very potent. Nose - 5.5-6/6, Palate - 5.5/6, Finish - 5.5/6, Finish - 1.5/2 = 18-18.5/20.

Day 6: This seems to be better than the Preuses (as it did on day 1.) It’s at a similar point in development but it’s got more going on in the nose - brighter with more fruit and verve - it’s got lemon and green herbs and a ton of saline minerals, green and red apple. The palate is bright and really salty - with lots of lemon and iodine. Packs a punch and really delicous. (573 views)
 Tasted by VincentMorey on 7/7/2023: Pure class with 13 years of age. Though a bit sharp and a touch alcoholic at this stage, with plentiful dried fruit, a touch of mango that you would find in aged Grand Cru, dried lemon, lemon confit, lemon peel, and that signature pith and almond paste blend that provides a smooth texture and mouth feel. The aromatic bitterness can be a touch overwhelming at times, but gets into the background when you have with richer flavored food. Personally I prefer the 2014 Vaillons. The 2010s for Forest and Vaillons for Dauvissat are at a point where they seem too focused and not as expressive. Perhaps it is a matter of personal taste. Hate to say this but I think I preferred the Jean Paul Benoit Droin Vaillons 2010 tasted last year to this. (597 views)
 Tasted by chablis28 on 5/26/2023 & rated 94 points: Old Guys lunch on Tilia's lovely patio. In attendance CV/DM/JV/TS/SS/LI/KB. Great weather, great food & lots of laughs. Siggy's btl. Oddly, a 2010 Forest in the same flight was pre-moxed while this one rocked! This is at its peak and so enjoyable that I'd be reluctant to risk keeping it longer. Dauvissat's Vaillons is less heralded than the Forest but always surprises me to the upside whenever I drink one. This showed stunning minerality, salinity & fruit all wrapped in a sense of regal elegance. Dauvissat at it best with that unique Dauvissat bliss & placidity found only in successfully aged btls. I lapped this up. My clear white of the lunch and a wine that gave Lonny's Chambolle a run for its money. A real treat. Too bad it's companion '10 Forest was pre-moxed! Thanks Siggy! (929 views)

This really has a piercing nose, fukk of tart citrus and lemon zest, bold crustacean minerality. The palate carries through that tension and verve, more ocean and minerals, tons of dry extract, lemon and lime with a dash of kiwi, saline, powerful and long. (914 views)

This is really showing that gorgeous oyster shell minerality, lime, tart lemon and citrus zest, fennel, chiseled and pure with excellent length. 93+pts. (979 views)

Medium weight, beautiful succulent texture, and pretty much perfect fruit/acid/soil balance. Crisp long finish. A tremendous bottle of Premier Cru Chablis.  Tasted by drwine2001 on 7/17/2022: Full yellow. Rising floral and citrus notes with faint sea breeze. Medium weight with a marvelous combination of glycerine and stoniness. Fresh citrus fruit in the lime/lemon register and a little apple peel as well. Gorgeous acidity and length. This was in superb form tonight.

Even sweeter citrus and greater depth and roundness the next night. (1146 views)
 Tasted by ThijsV on 6/17/2022 & rated 93 points: Loire trip 2022; 6/15/2022-6/19/2022 (Loire, France): Restaurant purchase at Vincent, Cuisinier de Campagne in the Loire Valley. From his (large) natural cave under the restaurant, so the label was pretty torn, but the wine inside was not. Apparently Vincent has a rather large Dauvissat allocation each year, which allows him to have people enjoy these older bottles at very reasonable prices in his restaurant. Deep lemon in color, with some flintiness, dried apple, fresh green apple, melon, some vegetable notes. High acidity and medium+ finish

 Tasted by llink on 6/12/2022 & rated 92 points: Decanted for 2 hours, part of a flight of 2010 Chablis. Tasted blind. My second favorite wine of the flight. This sports a beautiful honey element to the classic sea brine and lemon. Best nose of the flight. Rich palate, deep and flavorful with lemons and nori elements. Medium finish, not the most complexity but overall a fabulous wine. (715 views)

 Tasted by drwine2001 on 12/21/2021: Tasted next to 2010 Raveneau Vaillons. A shade darker than that wine. Medium weight, less obvious wood. Much more about iodine, kelp, and sea matter than the Raveneau, and less driven by citrus. I preferred this more savory Chablis style tonight. Superb bottle of Premier Cru with room for improvement.  Tasted by wir on 12/11/2021 & rated 92 points: Green apple, lemon, with only a very subtle honey note. Fresh palate with apple and oyster shells combined with a slight butter note. Driven by very good acidity and a Medium finish.

Not decanted but slowly consumed over a period of 4-5 hours, where the wine remained quitesimilar. I assume the wine has entered its mature phase. Normally, younger Dauvissat need quite some air to open up. (1003 views)

Mature to advanced aromas and palate, with Meyer lemon, honey, lacquer, sea shells, spice and citrus, dry extract and lemon confit. This bottle is keeping together, but it is riding the edge at this point. Whether it is just this bottle or representative, I can't say. (1697 views)

 Tasted by valedeniro on 2/8/2021 & rated 92 points: Looking gorgeous at 10 years old.Not a big crowd pleaser,but every sip had something to say,quietly but precisely.With some air the palate showed slightly ripe aromas of apple,peach,meyer lemon, lined with classic saline notes of chalk and oyster shell.On the palate it is a wine of medium weight with pure flavours and good precision.It is unquestionably classy, but just lacks that "wow" factor.  Tasted by Rollerball on 12/31/2020 & rated 92 points: From 375. Like a keel, steadying and thoughtful. Symmetrical but a little middle/ bottom heavy. Impeccable and individual for its sea shells and dense (but not powerful) lemon, pith, and orchard fruits. I would not call this exciting though, possibly either because it had to follow the really wonderful 2002 Billecart Salmon Cuvee Nicolas Francois Billecart Brut or because it’s energy is dwindling, at least in this format. A little too cold up front, once it had a chance to come up to temp got the lovely sea spray, salinity, and lemon pith along with taught acids.  Tasted by rocknroller on 9/15/2019 & rated 92 points: Monthly Tasting Group: Worldwide Chardonnay (Oceanaire, Mpls, MN): Light medium gold color. Small glass over 30 minutes plus. The nose has crushed seashell minerals, fennel, lemon, and brine. The palate feels bigger and powerful, good dry extract, lemon tart, taut, hints of butter, shell minerals. This started out way too cold and suffered for it at first. Came out of its shell and turned out to be quite good, though I will say I expect a little more when it's Dauvissat and a 2010.  Tasted by rlove on 8/14/2019 & rated 94 points: Deeper straw than expected but right where you want this. There's a sharpness that almost stings the nostrils, with intense honey and algae. Lots of weight to the big flavors of honey and savory algae, framed by racy acidity, without any flab. Finishes with mouth-coating honey and stone. The 2010 Vaillons is excellent. (1898 views)

Lime, citrus, quince, shy minerality, creamy texture but with much more acidity dominating the picture than the Les Preuses 08 & 10 we had alongside. Still quite a nice Chablis with a fairly complex aromatic profile and certainly with some more upside with age. I guess can climb 2, 3 points higher with more years on the hips. (2256 views)

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.

"... a hybrid of 2004/2007 and 2010. The stone, citrus and limestone amalgam is exactly what we search for in Chablis as the style harkens to a day in the Cote de Beaune proper (1960's - 1980's) when wine was not meant to be consumed the week it was released, battonage was not used by all and new oak was rarely seen ... the texture is natural and 'of the vintage' not 'of the winemaker' .... Like Sancerre or the Loire in general, 2014 in Chablis is one of those rare years with extract and transparency. It appears to be a vintage for the "neoclassic" ages and those of us intent on cellaring the most terroir-driven (but still powerful) examples of vineyard, site-place and varietal will want to invest (heavily) in the magnetic and electric 2014's." - Jon Rimmerman

"There’s not that razor sharp Chablis acidity in 2018,” says Patrick Piuze. “But there is good definition of place. The dry conditions drove vines to drink deeper down in the soil profile."
