| Community Tasting Notes | | Tasted by Cote d'Or on 12/15/2018: Tasted over 1 hr -translucent light/med gold -honey -med+ piercing acidity gives laser beam focus through to the finish, med- weight honey minerals mildly oxidative nutty yeasty finish reminiscent of a wheat beer -interesting, acidity much more prominent than a bottle tasted 5 years ago and while it is much more mature it gives it more freshness (481 views) | | Tasted by Sheila62 on 3/24/2013: Reductive upon opening,oxidative with exotic fruit on the palate with decent acidity, and good minerality. Bright gold, intense acidity, this wine really builds with a few hours in the glass. As others have noted, there is a Chablis aspect to this wine, but it is its own entity. Honey, flowers, citrus, herbs, cinnamon.. there is much to like in this wine. It has a fresh summer lemonade note on the finish now 2 hours on. If you are drinking it now, be prepared as it is quite linear and mouth puckering right out of the bottle, but becomes compelling with air (hours). Its geographical isolation has helped it to remain a rare bastion of traditional winemaking techniques, and today it produces some of the most distinctive wines in the world. Reds from the Jura are often light-bodied, earthy, berried, and reminiscent of the village wines of Burgundy (though here they are made of local grapes like Poulsard and Trousseau). While Chardonnay features widely, the true specialty of the region is the Vin Jaune (“yellow wine”) made from the white Savagnin grape. Cloudy, difficult Vin Jaune is made only in the best vintages, and must be aged for at least six years before being released. As it ages under a layer of yeast, known locally as “voile,” the wine slowly oxidizes, leading to complex aromas and flavors that range from walnut skin to sultana to spices and truffles. Famously long lived it is always sold in dumpy 62 cl bottle - the wine lost in production having been taken by les anges.
