Tasted by Oliverl1 on 1/1/2024: rarely purchase USA Cabernets as they are really not my style. My palate is more akin to old world wines from the Médoc and La Rioja in Spain. My local liquor store had been bought out and they were selling high price US wines heavily discounted. I saw this for $39 and I thought I would give it a go.

Decanted for 8 hours and wow it was still overwhelmingly powerful! Too much alcohol and too fruity “sweet”! I enjoy wines from the Rhône and Toros & Ribera del Dueros from Spain which have the same 15% alcohol content, but this is just a very un-sophisticated wine lacking complexity. I don’t understand why people pay three or four times what I paid.

I can see why some people like it, but it is just not my jam (it actually tastes like jam! ;😉) (1056 views)
Tasted by Ralphie1 on 12/6/2023 & rated 95 points: Spectacular! Drink now, at it’s peak. (1022 views)
Tasted by markyc on 11/23/2023 & rated 92 points: Scrumptious, as expected. Decanted about a hour. Dark fruits forward. Thick and chewy. Fantastic Charlie Wagner example. (972 views)
Tasted by Bello Spirito on 9/4/2023: Drank with Josh H and friends in San Diego (1290 views)
Tasted by webbaker on 8/23/2023 & rated 94 points: I’ve been drinking down some older bottles of Caymus from my cellar. This particular bottle was quite outstanding. Still a fruit forward wine, but not a fruit bomb by any means. Very well balanced. (1443 views)
Tasted by 385cbr on 6/18/2023 & rated 94 points: Had this with grilled ribeye steak for father's day. It has aged well and is drinking beautifully. It's a justification for buying good wine and bedding it down in the cellar for 10+ years to let it age. Very smooth and easy to drink with ample but not over riding fruitiness. Blackberry? Delightful but mild tannins mid-palate and through the lingering finish. Has undertones of minerality throughout. Paired perfectly with our ribeye.

This spring we tasted a 2021 cab at the new Caymus winery in Suisun Valley, CA (near Napa) but because of its youth I thought it snarled at me a bit. But any tendency to that has long gone from this nicely aged (Napa) vintage. Have one bottle left but probably won't leave it too much longer. (1138 views)
Tasted by Bandreas on 6/14/2023: A color as dark as Egypt's night; virtually impenetrable center.Wood and Brambles on the nose; the sweet smell suggests that it is highly extracted.
On the palate woodsy, tannic, with a bitter after taste. Not really a pleasure to drink, and not a good QPR either.
Not my taste. (1068 views)
Tasted by manny651 on 6/9/2023 & rated 90 points: still big and bold with plenty of fruit, has plenty of life left (965 views)
Tasted by ONEFIVE on 3/19/2023: Inky dark. Nose is muted. A bit of wild raspberry and confectionery notes. Thin on the palate. Boozy. Tannin creeps up the back end. Sweetness on finish. Not much fruit left. This wine seems to be falling apart. Clearly not intended to age this long. Wouldn’t hold it any longer. (1488 views)
Tasted by Mili Loves Wine on 3/11/2023 & rated 88 points: Flabby tannins. Sweet and cloying. Low resolution fruit forward. Difficult to identify descriptors. (1374 views)
Tasted by JK649 on 2/3/2023 & rated 91 points: Dark fruit, cherry - full of flavour. (1115 views)
Tasted by zylmanj on 1/22/2023 & rated 93 points: This was very good. I think it is on the way downhill but it was very smooth with a slight enjoyable dryness and deep dark fruit flavors. Crowd pleaser for sure. (1154 views)
Tasted by Bearesentials on 12/15/2022: Last one of 2010 in my cellar, a little past due. still drinkable but just barely for my liking. (1291 views)
Tasted by JB12 on 11/26/2022 & rated 94 points: Outstanding cab. Full bodied and very smooth. Decanted for an hour. Wine improved over the three hours it was drunk. Fig flavors forming a mellow and long finish. Long legs. (1213 views)
Tasted by Gary1961 on 10/19/2022: Definitely worth aging for 12 years. Smooth! Black Cherry. (1449 views)

Tasted by Gary1961 on 10/7/2022: Wine Spectator 92 pts. (1293 views)
Tasted by Lobster27 on 8/2/2022: Now I understand the criticism of this winery. It’s big and bold and full of flavor and if you don’t know wine you might think this is what good grape juice tastes like. In my opinion it’s really fancy fruit punchy sangria. On the nose I get blueberry pie, blackberries, and those black cherries you get in fancy cocktails. On the palate lots of acid and tannins. I’d say more tannins than acid. Flavors of blueberry, cooked black fruits. Velvety and juicy. This is high end (1460 views)
Tasted by Mike1369 on 7/4/2022 & rated 91 points: See my note from February 2021 basically same. Headed downhill and time to drink. Detected some hints of vanilla and I’m not sure I want to detect that in a 12 year old cab. Still enjoyed it just not my style or favorite. (6548 views)
Tasted by markcic on 6/19/2022 & rated 88 points: From a magnum opened 4 hours before we went to dinner. I guess what it comes down to is I am just not a fan of the Caymus wines. A lot of fruit and that sweet taste on the finish just did not do it for me. My guests enjoyed it as the magnum slowly disappeared. I served it along with a magnum of the 2007 Robert Keenan Cabernet Franc which was definitely my preferred wine. We all have our individual taste buds. (1484 views)
Tasted by webbaker on 5/3/2022 & rated 92 points: I’ve been drinking some older bottles of Caymus, 08, 09 & 10 (this). I’ve been pleasantly surprised, not a heavy wine, by any means, but still plenty of fruit without the jammy characteristic of younger vintages. Drink up. (1871 views)
Tasted by nicholasagonzales on 3/19/2022 & rated 93 points: Great balance in the mouth. While it drank well on its own, it got better with a nice ribeye. (1837 views)
Tasted by sylviap on 2/14/2022: Still lovely fruit, dark berries. (1754 views)
Tasted by webbaker on 2/5/2022 & rated 92 points: I expected this to be past its prime, but drinking nicely, still tasting fresh and vibrant. Not the fruit bomb I’d expect, better balance. (1611 views)
Tasted by Heidikthomas on 2/4/2022 & rated 96 points: Spectacular. (1522 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

USA

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.

2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson
