 Tasted by johnrm on 2/9/2022 & rated 90 points: Drinking well. Good fruit with restrained, traditional ‘Old World’ character and style. Rich, restrained, black fruit with some spice and good length. Well worth keeping to this point. It still has life. Well received at a group tasting. 90+ (389 views)
 Tasted by johnrm on 4/15/2021 & rated 90 points: Pretty much as my earlier notes. Lovely fruit on the fragrant nose quite soon after opening. Quite ‘Old World’ cab with style, elegance, fresh blackberry/blackcurrant fruit and acidity, smooth tannins, good length, and spice with dark plums later. My wife identified it immediately (blind) as Old World Cabernet Sauvignon. Very good on its own and excellent with food. It is ageing very well. I have raised the ‘end date’ to 2023+. It may live longer. 90+ (685 views)

The smooth tannins made it a good partner with sirlon steak. Not a complex palate but it is ageing pretty well. Next day, it was juicy with good fruit but perhaps a but simple. The suggested drinking end date of 2018 was too soon. I have raised it to 2021+. (853 views)

Mainly black berry fruit on the palate - blackcurrant and blackberry prominent with attractive blackcurrant acidity. Soft vanillic tannins at first but some leathery, damson-skin tannin emerged.
It softened substantially and retained the hints of orange and spice on the middle/late palate noted earlier together with the good balance. Good with food (beef bourguignon).
Very attractive, quite restrained Margaret River Cabernet.
Next day, the rich fruit was still evident but the vanilla character was more pronounced, indeed just a bit too much for me so I have marked it down a bit. (887 views)

Mainly black fruit on the palate - blackberry, damson, dark plum but blackcurrant developed with loganberry on the later palate. Soft vanillic tannins at first but some leathery, damson-skin tannin emerged.
After 5h, it settled down, softened substantially, and offered more restrained fruit (as above) plus a hint of orange (the taste of the kumquat variety known as 'Cape gooseberries' in UK) and spice on the middle/late palate. Good acidity, balance, and very long. Very good with food which further softened the wine and brought out the excellent balance of fruit and acidity.
The first bottle from a case purchased 2-3 years ago. I'm sure it will develop further. 90+ (1331 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
