 Tasted by jwhite6114 on 3/14/2008: Opened and decanted about 90 minutes ago ... all of sudden, after 1½ hours, it just opened up. It amazes me how that happens. It was decent, solid, a bit acidic, at first ... starting to mellow, and then OPEN SESAME! it was suddenly full of fruity flavors, the acidity became balanced by a sweet plummish, dark fruit flavor that lasts through the finish. The mouth feel is suddenly fully, and somewhat jammy. One drink is quickly followed by the next. Love it! (2059 views)

 Tasted by Loweeel on 1/22/2008 & rated 87 points: Night 1, starting to fade a little bit from the last bottle. Acidity is still very nice, but the fruit is more muted than I remember. Did not decant; popped and poured for glass 1, breathed for 45 mins-1 hr for glass #2. Night 1 = 86.

Night 2, a little overwhelmed by the acidity. Tannins not really apparent, but the fruit is nice. Not better, overall, though certainly different. I think this wine is approaching the end of its drinking window.

Night 3, this is the wine I remember. Maybe it's starting to go into its dumb period, because this took a while to open up. Decant this. Nice acidity, good cassis, cranberry, and sour black cherry. Nice soft tannins. (2301 views)

Nice Cassis, loam, and leather; decent tannins that got stronger and better-integrated as the wine sat. A bit one-dimensional, but a great cab at the price.  Tasted by jcurl on 12/2/2007 flawed bottle: There is something wrong going on with this wine. Bought from Wine Garage. Cork had a tremendous amount of crystalization and below that tons of jammy sediment. Actually "pop'd" out when opened and got on my shirt! Wine didn't taste oxidized or cooked but it was rather plane. Moderate nose, some earth. This is not fruit forward at all so more like a French style but without the complexity and depth. This bottle was possibly bad but from the other reviews I sense they may have had a storage problem at the winery. (2475 views)
 Tasted by Corrado on 11/16/2007 & rated 88 points: No formal write-up, but for the purposes of posting something meaningful, this is a clearly not your typical California fruit/jam Cabernet. Flavors here are very old-world, Christina Aguilera "Dirty" and earthy. Nose strikes me very much as something I associate with Merlot with the bacon/salty component and the flavors are very organic. Very nice work by Peter Wellington to make a California wine like this. This wine has either lost the edge it had this spring or the previous bottle was less than ideal. (2576 views)

aroma: my notes from last night escape me, though plum and alcohol were near the front of the nose
taste: rich and complex bordeaux-style. chocolate, plum, a hint of vanilla. fresh cut grass and sawdust make up part of this complex taste. some heat on the finish. a bit tart on the beginning, but opened up nicely. some dryness associated with it.
finish:- long and lingering, though with some heat and dryness.
ageeabilty:- likely meant to be drunk within 3 years or so, was a bit tart on the beginning, but opened up well. tartness will likely blend in nicely over a year. hopefully i can save my remaining bottle for 6 months.
overall feel: the 'unquantifiable stuff' - was a wonderful wine to enjoy by myself, though would suggest letting it open up a bit. i drank the bottle over about 2 hours and didn't decant at all, and noticed the end did taste a lot better than the beginning. i found myself looking forward to the next drink more and more, and shying away from anything to eat (like the brie i had on hand) as i didn't want to corrupt the enjoyment i was getting from the bottle. exactly what i expect out of a 15 dollar bottle. Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
