 Tasted by mflesh on 3/26/2021 & rated 93 points: Bought almost 7 years ago from a private cellar (who had purchased from the vintner). This one was a bit weird at first but always had a great nose. After a flinty and metallic finish, this one settled down. First notes were a little "metallic" with a little disjointed acidity. But after 2 hours this one changed. Blackberry backbone. Black licorice. Incredibly youthful at 21 years of age. Full throttle black fruit, brambly, hint of vanilla. Wow. Finished without being awkward... Very weird and wonky front turned into a balanced and complex wine with a very nice finish. Perfect for 21 years! (999 views)

 Tasted by EMark on 9/6/2015: Beautiful dark red color with no indication of bricking. Earthy nose. Very smooth on entry. It takes a second as the wine moves back to detect currant/black raspberry flavor, but it is very subdued. While tannin is detectable, the years on this bottle have subdued or resolved most of them. A similar comment can be made about the acid level. Light acid is detectable. Lengthy finish with hints of leather or tobacco. (2681 views)

 Tasted by Outplaying on 6/12/2011: Chappellet Vertical 2000-2008 (The Twelves, West Grove PA): On the nose, hints of earth coffee and chocolate. A slight bit of heat that for me distracted a little from the wine. Some slight herbal notes, spice, and soft fruit but with some fine tannins still remaining. Slightly drier than the later vintages which I liked. The most old world-like of the tasting. A toss up for me as to whether I liked the 2000 or 2001 better in this flight. The 01 was a little richer and bigger but not as complex. (3905 views)

Very dry while still holding on to it's core of dark fruit. Dusty, well integrated tannins. Enough acid to provide some lift in the end. Drinking great right now. (3013 views)

I agree with the two other notes - this is a better wine than what Laube scored it. Color: dark purple. Nose: currants and chocolate. Taste: chocolate again. Delicious. Full-bodied, lots of concentration, but balanced. 4 left in cellar; 2 available from Geoff at $20/ea. Better grab them soon. I think this may still improve. (3920 views)

 Tasted by 97mjr on 10/27/2004 & rated 93 points: [Penne with pesto] Dark purple; on the nose, lavender, currant, and spice; full-bodied, creamy, meaty, super concentrated; on the palate, blackberry, chocolate cedar, spice and smoke. When I first opened seemed a little lighter with detectable Petite Verdot, however over about 4 hours became heavier with super-concentrated fruit and more pronounced chocolate. A great drink now, but if you have only 1, hold it; it benefit from a few years in the bottle. I regret that I bought only 1. I find myself so frequently dissappointed by the many overpriced and overhyped Cabs, however at <$40 this is a great selection. (4291 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
