Full, forward & fragrant nose of ripe fruit aromas of dark cherries, blackberries & cassis with classic cigar box overtones of cedar & tobacco, leather, earthy/dusty, anise, coffee/cocoa, some spices, minerals & a hint of oak/vanilla in the background. Full bodied with a very good concentration of well balanced & smooth textured, ripe fruit flavors of dark cherries, blackberries & plums with cocoa, herbs, minerals, spices & a hint of oak/vanilla in the background. Long lingering finish. Drinks quite well at present with decanting & extended airing. Even at 16 years of age, it still has some potential for further development with additional aging. Another evening with top-flight Napa Cabernets! The 2 wines were superb but also couldn't be more different. The Forman, as we know, is an exercise in restraint, balance and finesse that delivers power in a velvet glove. The Tor is an explosion of fruit and alcohol, with very little tannin and an amazing finish. Wow!!

 Tasted by TRueNOLA on 1/14/2023 & rated 94 points: Loved this wine. Well balanced and structured, not an overly expressive wine at this point, but was everything I'd want from a 2007. Notes weren't detailed here as we had people over.

Nose: forest floor, some green bramble.

Body: muted red berry, still present tannin and acidity. In that transition to secondary flavors. (1375 views)
 Tasted by Decanting Queen on 1/9/2023 flawed bottle: A disappointment for me after reading the notes here, but I suspect I had an off bottle. Day 1 slow oxed for 3 hours and then tried to drink with dinner. Nose was pretty but not very intense and palate fairly closed down. Day 2 big improvement, concentrated fruit except that I would describe it as ‘stewed’ so perhaps this bottle had some heat damage along the way. Nice acidity and quite big grippy tannins even on day two, but just not as enjoyable as I had hoped. (2451 views)

On the palate dark berries like blackberries and cassis, sweet spices, cedar, chocolate and coffee. Good acidity and round tannin. Juicy and refined with beautiful acidity and round tannin with still a lovely bite. Concentrated and beautiful wine. (1599 views)

 Tasted by Highlander on 12/2/2021: If ever I had trouble describing a wine, well, nothing compares to this. Double decanted for 2 hours and the first glass was flat! poured the second glass and let it sit for 15 minutes and it began to to open up. Wow.....All sorts of dark flavors without the syrupy texture that so many over extracted Napa Cabs often bring. This reminded me of a Pontet-Canet (2003 vs. 2000) Fruit forward, but not in your face. Very much modern Bordeaux style, but I am not sure this would be recognized as a Napa Cab in a tasting. Most Enjoyable (2082 views)

Violet notes are on the nose but the palate is treated to dark fruit, herbal essence and pine forest with a licorice finish. The tannins are well integrated but can still go for a while. A very good vintage that is dominated by power wines from Napa, but Forman has achieve a distinctive wine that shows a great balance between fruit and delicate structure. (2098 views)

 Tasted by Snag One on 4/3/2020 & rated 93 points: Decanted prior to pouring. Deep dark ruby red and an expressive nose consisting dried figs, mint, coffee, pencil shavings and loam. Very soft tannins that subtly moved aside for layers of black cherries, cocoa, black peppercorns, cassis, mint and ripe figs. An enjoyable wine that made me wish we had more. (2463 views)

Either this needs a few more years or a good decant. Friend I drank this with has a coravin which we used on several different bottles this evening. Robert Parker: "Ric Forman is arguably Napa Valley’s first superstar winemaker. Although sometimes overlooked today, there is little question Forman has had a profound influence on a number of younger winemakers who still speak of him with great reverence. In 2012 Forman celebrated his 46th harvest. Today, Forman counts on the assistance of his son Toby, in running this small, family-owned jewel of an estate. As for the wines, they are superb, but, best of all, remain realistically priced for the consumer who wants to drink top-flight Chardonnay and Cabernet Sauvignon without having to take out a second mortgage. Forman’s Cabernet is one of the classic masterpieces of Napa Valley, even if recent vintages come across as a bit riper than the norm. Still, it is impossible to go wrong with any of these wines."

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
