Nose of black cherry, mocha, blackberry, cranberry, and roasted Wagyu, same on the palate, big body, very silky, melted milk chocolate texture on the mid palate and finish, delicious tasting Cabernet Sauvignon, at its best so enjoy sooner or during the next 5 years, mouth filling fruit, lovely long, long, flavorful finish and mature delicious aftertaste.

It was much more restrained than I expected. Definitely new world and has that fruit, but balanced with good acidity. (3658 views)
 Tasted by VlgJeff on 6/20/2021 & rated 91 points: 2005 Silver Oak Cabernet Taste-Off: Decanted for about 45 minutes. The color was a medium violet to a faded rim. Mostly red fruits on the nose, with an earthy note. The medium bodied palate showed mostly red fruits, some darker fruits, some earthy notes, and a touch of spice. The acidity was nicely balancing. The standout feature that differentiated this bottle from the 2005 Alexander Valley Cabernet was the noticeably smoother and silkier mouthfeel of this wine. Should hold for several more years, but I doubt that it will improve, so drink up.
This bottle was held under "perfect" conditions since purchase at the winery in 2012. At 15 years old, it is a solidly good, but not WOW, Cabernet.

Huge tasting difference with the time you decant and let breathe.
Gave it a taste immediately upon opening, sharp and tannic. Then waited 1 hour and it had opened up nicely. The magic was it kept opening up over the second hour and got better and better the longer it was breathing. In the end a very smooth taste. (1498 views)

Each bottle has surprised and delighted me. It’s got that Silver Oak character - hint of floral perfume that stays with you, and allows you to breathe in over the back of your palette and taste it all over again, long after you finish each sip. Just love this wine... still big, still bold, but soft enough to sip and enjoy standalone. I think it’s at its peak right now, so drink up! I have three bottles left to finish by the end of the year! A deep red/garnet blend of 80% Cabernet Sauvignon, 10% Merlot, 7% Cabernet Franc and 3% Petit Verdot (aged for 25 months in 100% new American oak), it retains its core of dark berry fruit that is augmented with espresso, licorice, chocolate and eucalyptus. Medium-to-full-bodied, low in acidity and with well-woven alcohol (listed as 13.5%), its tannins have largely resolved. Solid in the middle and finishing with good length, this remains true to Silver Oak's style. Well-cellared bottles should reach their 20th birthday. Drink now-2025. (2634 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
