The wine is even better on the palate with its palate presence that displays its wealth of fruit and spices from start to finish. This is simply a fabulous style of California Cabernet.  Tasted by StainedGlass on 11/4/2023 & rated 95 points: Decanted 1.5 hours. Medium dark red and purple black base color with some browning / bricking consistent with age. This wine is in its optimal second stage with tertiary characteristics very evident. Cassis, black cherry, touch of coffee, leather, plum and spice box. Well-integrated tannins and good acidity, and it lighter (in a good way) than typical Napa cabs. 14.1% abv. I would drink to 2027. It could go longer than that but I am not sure there would be a significant incremental improvement. (D's and K's wedding shower) (2669 views)

Highly concentrated dark fruit with notes of cassis, black raspberry, plum with hints of spice and cigar box. The tannins are soft and well integrated with long finish.  Tasted by pmarlo on 10/15/2023 & rated 94 points: Cork soft but pulled solid and intact. Fruit is not dominant but tertiary flavors give this a nice feel. Suspect fruit will appear in time. Nice but faint bouquet. Everything seemed to point to wine emerging. Tannins nowhere in sight, fully integrated. Tasting the alcohol though. Hours later, minimal fruit, astringent, but still have hope. Vacuum sealed for tomorrow.
Now two days later. I typically don't score a wine with limited fruit high, but I do this. I think this has evolved into its next cabernet stage. The mouthfeel of this is really good. Even though it's astringent when swished in mouth, it's more tannins that alcohol. This will probably be one of my last time having this wine as the price has more than doubled since I bought this. It's a ponderous wine that makes me want to extract tasting info. Feels like a mature cab blend here. (1856 views)

youthful purple red color, substantial and welcoming nose of cassis, coffee, cherry, oak spice and brush, on the palate at peak, fine broad fruit, chalk notes, blackberry and a hint of chocolate, fine length with a seamless finish, still a bit rambunctious but the tannins are nearly resolved, layered, relaxed, just coming into its own, wonderful wine.

 Tasted by hoservin on 9/4/2023 & rated 95 points: Decanted for one hour. Nose of violets, blackberry, currant, graphite, cedar and tobacco. Black and red fruit, graphite, tobacco, cedar, crushed rock and velvety tannins on the palate. Long layered finish with excellent depth. Full bodied. A beautiful wine with clear Bdx influence. Served with hickory smoked, reverse seared, strip steak and blue cheese, black truffle butter. (1794 views)
 Tasted by OttawaB on 8/16/2023 & rated 97 points: Stunning bottle. Dark red/purple with fine sediment. Cork just disintegrated when removing so I had to decant to get the pieces out. Nice aromas of berries, cherries, vanilla, cedar, pipe tobacco, and florals. Flavours show cassis, ripe cherries , almost kirsch-like in nature. Ripe sweet dusty tannins, and an overall creaminess. Touch of herbs and baking spices on mid palate to finish. Medium to heavier bodied. Heavier coating/dusty mouthfeel. One of the best wines I have opened this year. Still lots of time to age. Textually smooth and rich with a pretty underlying frame giving nice lift. The fruit matches the structure perfectly. Pure deep and delicious black fruits with nice spicy elements throughout. Drink or hold. One of the best wines of year, but then again it’s only February… (3246 views)

 Tasted by El_Dougo on 11/26/2022: Tasted 06 & 07 in a Thanksgiving vertical. Both were decanted approx 1+ hour. The 07 showed greater fruit, acid, balance and finish than the 06. It has been reported here and elsewhere that the 06 is getting tired and I would concur. If I would do it again, I would not decant the 06 (it wasn’t my idea). I think there is plenty of life left in the 06 if handled properly, but clearly the 07 is more robust now. (3183 views)

 Tasted by Darjeeling on 10/9/2022 & rated 94 points: Traditional cigar box, cassis, tobacco, cocoa, inky violet with a great nose. Very on theme and checks all the boxes. Can tell new world, but very close to old world to be confused. Tannins resolved and getting the tertiary forest floor emerging. Drank from 375. Abv felt a touch warmer than the 14.1 listed, presence is felt. (2245 views)

 Tasted by Michael Hung on 5/6/2022 & rated 95 points: The 2007 Dominus is an interesting wine. One thing for certain, it needs more time. We started with a hour decant before pouring, and upon trying it was noticeably wound up and closed. It took all of dinner of trying the wine before we decided this just needed more time and took it back to the hotel to finish. Just constant ups and downs with some sips of regret and then some sips of greatness.

Once we gave it time and reopened it at our room, the wine was singing beautifully, just over 4 hours of being opened. Nose with some earth and animal notes, salinity, sea breeze, dried black fruits, raisins, dried currants, fig, vanilla, leather. But man, once this wine hit its stride, it just completely transforms. Intensity of flavors, silky velvety mouthfeel, great complexity and range of notes. The issue right now is getting there, and I suspect it may take at least another 3-5 years in the bottle to hit that spot. 93-96+ pt

In comparison to its much younger, more prestigious brother, the 2018 Dominus, I would say the 2018 bottling is just overpowered and firing on all cylinders with an intensity of flavor that was not showing in the 2007. But when it was singing, the 2007 Dominus was magnificent and beautifully balanced, showing a very French styling of wine with restraint and finesse. A very elegant wine! I cannot wait to try the next bottle in a few years. (3376 views)

2007 Dominus Estate

The 2007 vintage began dry with some very cold days and single-digit nighttime temperatures in early January, and continued dry, with about 60% of normal precipitation through the spring. Temperatures were warmer than normal in April and May with resulting earlier budding, bloom and set. The summer growing season continued on the mild to cool side. There was a brief period of heat that spiked to 103°F on August 29th, but the temperatures cooled after several days. Clusters, as well as individual berries on the clusters were notably small and nicely concentrated in all varieties due to the dry season.

Red Bordeaux Blend

Red Bordeaux is generally made from a blend of grapes. Permitted grapes are Cabernet Sauvignon, Cabernet Franc, Merlot, Petit Verdot, Malbec and rarely Carménère.Today Carménère is rarely used, with Château Clerc Milon, a fifth growth Bordeaux, being one of the few to still retain Carménère vines. As of July 2019, Bordeaux wineries authorized the use of four new red grapes to combat temperature increases in Bordeaux. These newly approved grapes are Marselan, Touriga Nacional, Castets, and Arinarnoa.

Wineries all over the world aspire to making wines in a Bordeaux style. In 1988, a group of American vintners formed The Meritage Association to identify wines made in this way. Although most Meritage wines come from California, there are members of the Meritage Association in 18 states and five other countries, including Argentina, Australia, Canada, Israel, and Mexico.

In the United States, "Wines with “estate bottled” designations must: a) also designate an appellation of origin or an AVA, and both the vineyards and the winery must be located there; b) the grapes must come from vineyards owned or controlled by the winery; and c) the wine must have been produced, from crush to bottle, in a continuous process without leaving the winery’s premises."

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628.
