It smells like strawberry, raspberry, grapefruit, lime and baker's yeast. It tastes like strawberry, raspberry, red currant, grapefruit, lemon, lime, apple, peach, apple blossom, baker's yeast, biscuity and leesy. The body is medium. The wine has round texture. On the palate the wine is refreshing and vibrant with a lovely mouthfeel from smooth bubbles, fresh acidity, and notes of lemon, strawberry, and pear. On the palate and nose the wine is quite linear; a bit chalky and hard on the palate with no brioche / yeast, but good acidity. We retain our rating of 90 pts.

Sadly the price of this has increased dramatically for us, around $26 now. It was an incredible bargain at $15 a few years ago: now it is still not bad value but not great either. (675 views)

Chewy, slightly caramelly, a touch of grilled blood orange. Sweeter than expected, but quite balanced. Clean, pretty good fruit, a little strawberry emerges after a time. Not a showstopper but drinks well and a pretty good price. The next day, still ok although a touch of bitterness has crept in. [Cork + cage; 12% abv; Sainsbury's, reduced from £15 to £12]. Our "Pearl of the Dawn is a brilliant salmon pink from the Burgundian Pinot Noir that goes into this lovely, fruity Crémant de Bourgogne.

80% Pinot Noir & 20% Gamay
Winemaking:
To create such a beautiful, aromatic rosé, we begin with a pneumatic pressing combined with short maceration on the skins. We follow this with the méthode traditionnelle, involving a bottle fermentation of at least 24 months, far past the legal requirement of 9 months, to ensure that the lees impart the maximum aromas and finesse to our wine.
Visual Aspect:
Salmon pink
Nose:
Fine bubbles and light moss developing blackcurrant and strawberry's fruity notes.
Palate:
Fruity notes are mixed with a nice acidity that follows the taste until the end.

Burgundy

Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.
