 Tasted by slywka7 on 11/28/2020 & rated 92 points: Opened at 3:30 but did not decant. Aromas of blackberry, currant, lead pencil, plum and dusty berry. Flavors of black cherry, blackberry, currant, balsamic and leather. Ends with a 30-35 second finish with black cherry notes. Has a bit of a twang to it. Not as good as the previous bottle. Tasted non blind. Opened and served immediately. Followed over about two hours.

Purple color in the glass, clear looking throughout. Nose of soapstone, cassis, violet and plum. Flavors of cassis, plum, Bing cherry and boysenberry. Medium acidity, medium to firm tannin, full bodied. Drink or hold. I'd drink. (1755 views)

Decanted 90 minutes at home, and slow-ox'd for an additional 60 minutes at Crabtree's, for a Berserker offline. No nose, then a slight perfume nose. Some tannins. I didn't taste a thing. This was nothing remarkable. I'd sit on this for a few years if you own a bottle. This bottle was signed by Todd Anderson thanks to Carrie Bowman at Napa Valley Wine and Cigar. (5507 views)
 Tasted by Musigny151 on 5/13/2014 & rated 70 points: On opening, and pouring for the table, I could smell from several glasses away, the taint of volatility. When I did put some in my glass, it showed massive amounts of sweet, candied fruit. The palate was incredibly soft, fat, filled with overly ripe fruit and had a chewy, thick texture leaving an imprint of yet more sugar and sweetened blueberries.

I dislike this wine for so many reasons. Not only the winemaking flaws, but the philosophical ones. It begins with a complete absence of terroir, which should at least leave you with a sense of the grape variety. The fact that it was a Cabernet would have surprised me; blind I would have guessed that it had some overripe Syrah. Finally, the wine was simple, grape flavored ; every nuance, every complexity had been obliterated in both the vineyard and the cellar, leaving a sweetish beverage, with a slight overlay of vinegar. Nasty stuff. (5830 views)

Mostly on the front palate. Fruity palate with complexity but not enough structure. Some acidity in the finish, but not enough balance. (2495 views)

 Tasted by slywka7 on 1/11/2014 & rated 94 points: Wine Dinner at Collyer Catering In Westport, CT. (Collyer Catering): Probably the most confusing wine of the night. Wine was decanted 30-45 minutes before serving. The nose on this was very sweet, candied even, with aromas of cherry, licorice and rose. For all the nose had to offer, it was like the complete opposite on the palate. Got some sour cherry, plum, rhubarb and blackberry. The wine was very balanced though with was the perplexing thing. The nose led you to believe it might have been a fruit bomb but it wasn't. Nevertheless, a very enjoyable wine. (2960 views)

Dense black fruit and mint on the palate but it lacked the meatiness that I noted a couple months back. Lots of charcoal, vanilla and spicy oak combined with very dark fruit.  Tasted by Cellar Fiend on 8/7/2011 & rated 95 points: Easy 95+. I drank this after a 3 hour decant. I did not take notes at the time, but this wine was amazingly delicious. I recall commenting on the depth of fruit and enjoying the long finish. This was my lone bottle of this, but I have more 2007. If the 2006 is any indication of what the 2007 has in store, I will be a happy camper. Hold or decant at least three hours. (4688 views)

Tasted non blind at a wine dinner.

Garnet to dark garnet color in the glass, clear looking throughout. HOT nose of pepper and dirty dishwater. Flavors of berries and a bit of tart cherries. Medium to bright acidity, medium to firm tannins, full bodied. Drink? Hold? Use as a Molotav Cocktail? Seems hot and completely disjointed at the moment. Therefore no rating. (5042 views)

Nose of overwhelming leather, alcohol and ripe red fruit. Similar palate with maybe some blueberries and chocolate. Seemed to me more consistent with a highly extracted AU shiraz than Napa cab. Mild TCA prevented this wine from getting a better score, but even with the flaw, it was still my wine of the flight. Decadent notes of dark chocolate, creme filled truffles, cherry compote, and mocha latte. Rich and hedonistic on the palate and still a joy to drink. Too bad about the cork taint.  Tasted by tooch on 3/5/2011 & rated 91 points: Northern NJ/NY Offline (Cafe Monet - Millburn, NJ): This was my clear surprise-of-the-night-wine. The nose was very interesting and unique as I think up other Napa cabernets I've had. This had a much more pronounced meat drippings aspect to it that I usually connect to Northern Rhone syrahs...found this to be a nice compliment to the dark, brooding nose. The palate was structured and had dazzling blackberry, charcoal, vanilla, and bacon components. Impressive balance, with a long finish. (5193 views)
 Tasted by River Rat on 2/19/2011 & rated 95 points: Decanted for 2+ hours... Dark garnet color with incredible aromatics. So much leather, I thought I was drinking from an old bomber jacket. Leather and olives on the palate mixed with cedar, pine, lots of evergreen notes. Didn't get the sweetness previously noted. Just a hugely elegant wine with awesome flavors. Consensus WOTN before anyone knew what it was. Everyone noted they would spend excess of $100 to drink this again. Wow wine of another proportion for me. And to think this is the ugly step-child of the Ghost Horse line-up. (4844 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
