 Tasted by Robmcl920 on 10/17/2023 & rated 93 points: Vinous Piedmont Icons Dinner @ Legacy Records (Legacy Records, NYC): The 2000 Crichet Paje showed very poorly when first poured, but improved with time in the glass as some of the more oxidative notes blew off. I bet that a full bottle, with more time to contemplate the wine and more air exposure, could have shown better.

On the nose, I initially found an oxidative, stewed black plum fruit expression, but this blew off with time in the glass, turning into more pure black fruit. With time in the glass, I found black plum fruit, balsamic, leather, roasted meats, and sweet spices. On the palate, the wine showed high acidity and was medium plus in body, with rustic black fruit, meat, and leather notes.

This wine was so dramatically different than the '04 Crichet Paje, but appealing in its own way. (873 views)
 Tasted by Eric Guido on 6/7/2018 & rated 93 points: Roagna Exploration Tastings (Morrell Wine Bar & Cafe): Here I found a dark and rich display with a mix of black cherry, crushed stone minerality and hints of animal muskiness. On the palate, silky, soft textures gave way to mineral-infused black cherry with a balanced mix of zesty acids, youthful tannin and minerals. The finish was long, as its tannins began to settle in, firming up the experience and promising many years of development. Admittedly, I wanted more depth from the 2000 Crichet Paje, yet the wine delivered in spite of the vintage. (3793 views)
 Tasted by Markus IWC on 4/13/2018 & rated 93 points: Crichet Paje vertical with jokers, wine #1: Crichet (top of hill in local dialect) is the grand cru of Paje. Ecologic vineyard management and ultra classic cellar practices with 3 months meceration. Minuscule production of 1000-2000 bottles per year, released 10 years after harvest.

Mean barbwire tannins initially, softens significantly with air. Powerhouse with beautiful maturity notes. Raspberries, saddle leather, tobacco, orange zest, coffee, chocolate and roses. Early in drinking window. BV=0, WV=0 (1727 views)

Great wine, with a fabulous nose!
Very mature, with stable, some licorice, tobacco leaves, gravel, wet hay, under bush, leather and herbs.
Perfect balance between acid and fruit, fine cherries, even tastes a bit like stable.
Good, nice and pleasant, fine grinded tannins.
Very long and complex finish, goes on for a minute +.
A lovely Barbaresco, one of the best I have ever had.
This was very Bordeaux like, especially on the nose, and most of the tasters around the table tonight misplaced it there, when tasted blind (including me). (3265 views)

What a nose! tremendous, very mature, hay, licorice, stable, tobacco, leather it is all there.
Nice balance, long taste with a hint of stable, leather and hay. Fine tannins that build up the total whole impression to a magic finish.
This is a fantastic Barbaresco. 6 out of 7 thought is was a Bordeaux. Very interesting. (3711 views)
 Tasted by Christoffer78 on 10/16/2012 & rated 96 points: Like a fairy tale or an Italian saga, the 2000 Crichët Pajé delivers an amazing journey through ever shifting scopes of pleasure. This wine is one of the best Italian wines I have ever tasted, there is no doubt about it. To me this effort represents the very epitome of elegance and complexity. The palate first offers up massive sour cherries, a whiff of cacao and sun dried mint. After an hour there is a new elegant tone of wet stable and tobacco leaves. Each time I put my nose in the glass there is another element emerging. It is simply brilliant. The palate is super integrated, structured and elegant with a length on the finish of about a minute. Giù il cappello di fronte a questo giovane produttore che non attua compromessi e va diritto per la sua strada , ecco un confortante esempio di giovani leve langarole.
La visita comincia dalla vigna (bonus) dove si pratica l'inerbimento e si cerca di mantenere il più possibile inalterato l' ecosistema vigna.
Le vigne sono piuttosto vecchie e ottenute da selezione massale.
La macerazione sulle bucce dura , a seconda delle annate , un centinaio di giorni e si usa la tecnica del cappello sommerso con steccatura.
Tecnica piuttosto "arcaica" ma a quanto pare piuttosto efficace.
Gli affinamenti in botti grandi e qualche barrique "scarica" è lunghissimo e alcuni vini escono anche dopo 10 anni.

Nebbiolo

Nebbiolo is a red grape indigenous to the Piedmont region of Italy in the Northwest. The grape can also be found in other parts of the world, though they are not as respected.

Nebbiolo is often considered the "king of red wines," as it is the grape of the famed wines of Barolo DOCG, Barbaresco DOCG, and Roero DOCG. It is known for high tannins and acidity, but with a distinct finesse. When grown on clay, Nebbiolo can be very powerful, tannic, and require long aging periods to reach its full potential. When grown on sand, the grape exhibits a more approachable body with more elegant fruit and less tannins, but still has high aging potential.

"Nebbiolo" is named for the Italian word, "nebbia", which means "fog", in Italian and rightfully so since there is generally a lot of fog in the foothills of Piedmont during harvest.

Nebbiolo is a late-ripening variety that does best in a continental climate that boasts moderate summers and long autumns. In Piedmont, Nebbiolo is normally harvested in October.
