 Tasted by Wine Canuck on 6/5/2015 & rated 88 points: Some Grilling with the Toronto Cru (Toronto, ON): This pours fairly deep and inky. The nose is of vanilla, coconut, blueberry compote, blackberry jam, licorice and blue cotton candy. not overdone but heavy on the fruit and oak, still not totally integrated and really lacking he savoury edge I look for in Cabernet. Others have had better showings of this wine. (3213 views)

Black currant, plum, some smoky, meaty notes, cedar and dill from the oak that slowly transformed over the course of the evening into cigar box notes. Excellent acidity, well balanced. Initial beautiful fruit with lots of vanilla cream and chocolate. The creamy chocolate and fruit continue through to a long finish. Tannins mellowed and body perfect for this drink-me-now wine which will probably last for a few more years if well stored. (2610 views)

 Tasted by Javachip on 2/5/2013 & rated 91 points: Clear dark garnet-ruby color. Subdued bouquet of creme de cassis, forest floor, anise seed, hints of saddle soap and creosote. A welcome sense of freshness and purity, pleasantly free of any savory meaty notes. On the palate, this was balanced, with smooth tannins, pleasant tartness, medium body and nice finish. Improved steadily over two hours in the glass and was still very nice a day later under vacuum stopper. (2468 views)

 Tasted by EMTAME on 6/12/2011 & rated 91 points: Decanted for sediment (there was a moderate amount) and let breathe in the decanter for ~2 hours. This was essentially the identical twin to a bottle of the '02 I had over the winter. Only difference was the nose on the '02 was more profound. On the palate, this had the same great balance of fruit, velvety tannins, and acidity. with a really nice finish. Paid $25 for this at auction a few months ago...what a steal! (1704 views)

 Tasted by decaturwinedude on 10/1/2010 & rated 89 points: Initially, this showed that slightly off-putting vegetal nose and palate of an old Cab that had passed its prime. However, with air it reveals some nicely situated dark fruit and cassis...with a touch of acidity hanging in...With time, this becomes a quite lovely aged Cali cab that is very Bdx-like stature. Not a blockbuster, but quite nice. (1450 views)

Vibrand black cherry fruit and cassis with secondary notes of tobacco and licorice. Still has power and decent grip. Very good now and still has plenty of life. (1492 views)

Great big nose, fully integrated tannins and a beautiful purplish color as it was being decanted. (Hardly any sediment by the way.) Really enjoyed it with the great BBQ'd pork ribs that Janet whipped up. (1668 views)
 Tasted by Greg W on 3/8/2005 & rated 91 points: Dark purple in color. Deep, rich, expressive nose - plums, cherries, milk chocolate - really nice cabernet nose. On the palate, notes get a little "darker" - lots of concentrated fruit - dark chocolate, plums, berries, a little cedar - well structured wine. Finishes well - tannins still very much in evidence, slightly bitter - fairly long in length - still plenty of life left. Drinking well now, but I'll probably wait another year before trying the next bottle. (2402 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
