 Tasted by deon40g on 4/12/2014 & rated 82 points: The 2011 Simi Cabernet Sauvignon from Alexander Valley is currently rated as 87 points by the CellarTracker community. This wine is not rated by Wine Spectator, a source that I often reference. It appears that I am far off from the rest of the CellarTracker community, as I rate this wine as 82 points, the second lowest rating I have submitted on CellarTracker.com to date. The 2011 Simi cab is very rough out of the bottle. It’s an aggressive medium bodied cab. The tannins are notable on the mid-palate, with heat on the backend…that’s the redeeming qualities. I tasted this wine straight out of the bottle and through an aerator. The wine did not seem to be acceptable by either method. I rarely allow a wine to continue to the next day, but I had enough of the attack on my senses after half the bottle…the nose was also less than appealing. I left the bottle open for about 3 hours, then I corked it until the following afternoon (from the evening before). This wine did improve overnight. Whereas it was no better than an 81 out the gate, I give it 83/84 points for the day-after tasting. I suppose this averages out to 82 points overall. While acceptable, this is a low score from my perspective…especially for a Sonoma cab. Given the scale below, the Simi is more appropriately rated as average, but anything below 80 points should really be given poor consideration in general, as opposed to a shift from one’s personal preference. I believe the latter is the case here. I received this cab via a prize drawing, so I do not expect it to reappear in my cellar.

 Tasted by allencbk on 1/19/2014 & rated 85 points: Smoky, caramel, woody, dark fruit, chocolate in aroma. Tannin becomes round in the second day, red berry, woody in taste. Good with food.

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
