 Tasted by dkentaustin on 8/1/2022 & rated 95 points: PNP. Cork was in pristine condition. Bright garnet color with a light amber edge. Sweet cherry notes with cigar box and light mocha. Ripe, juicy fruits, especially raspberry with cherry cola, white oak and beautifully blended quintessential CA cabernet flavors. Still drinking very youthfully showcasing incredible structure, integrated tannins and a vibrant palate. Loving this wine - kudos to Chuck Wagner and his team - they continually produce outstanding wines.

 Tasted by dkentaustin on 7/23/2021 & rated 92 points: PNP. Deep garnet color. Bright red raspberry, sweet red cherry, light plum hoisin, flint and Asian nuances. Great structured CA Cabernet with lovely layering effect. Definitely ready to get after.

 Tasted by Arcturus on 4/16/2021 & rated 90 points: 90. This vintage has always been a little heavy on the black currant, black licorice. To me it’s a bit sappy and port-like now. It’s lost a touch of balance without the acidity but it’s where Caymie goes in it’s outer years. Drink up. (2811 views)
 Tasted by dkentaustin on 1/31/2021 & rated 93 points: Decanted & filtered after a crumbly cork. Deep ruby red with sweet, ripe fruits and cassis. Hoisin, spices and black cherry. Lovely mouthfeel giving it a seamless palate with well integrated tannins. Starts to turn a little pruny after an hour or so. If you have it, we would drink it.

Spice and a bit of asphalt and hints of raisin. No tannins are super fine. Wine is integrated and balanced. This is a fun wine to drink. Cork was soft so be careful removing it. (2199 views)

Still plenty of life left in this selection. Took about 30 minutes for the juice to stretch its legs but once it did everyone really enjoyed it. Medium-bodied with loads of Christmas spice cake, prunes, plums, molasses and cloves. (2562 views)
 Tasted by MichielV on 3/1/2019 & rated 91 points: W roast chicken: Helen back from Florida for a few days. This was very good, great color and nose upon opening, still looked very young. Big nose. Onpalate typical Calfornia cab that was very well balanced. Good finish. It really dveeloped overtwo hours and turned very elegant vs the bold cab upon opening. Good wine but drink now, to make sure you keep enjoying it while good showing. (2068 views)

None of the sweet overly-rich style Caymus is known for. This bottle is not subtle but more restrained and layered than normal. (1836 views)

Black currant and forest floor on the nose, pallet big, layered and vibrant, dark fruits, nice tannin/acidity balance. So, still plenty fruit with a maturing structure, An easy 5 years of plateau. This was darker fruit than the Caymus, but plenty generous, lush with more complex secondary flavors and an incredible 20+ second finish that belied its age. a very very appealing wine that is not showing its 15 years of age. the Caymus was 2nd place with plenty of bright fruit, very soft tannins and a finish that was shorter but still 10+ seconds. one of the best non Special selects i've had and also not showing its 14 years of age. Larkmead was a delicious napa cab that paired perfectly with a dark chocolate cake. nothing notably distinct about it, but it was very good. the 96 Clos Du Marquis was the disappointment. incredibly thin and as it opened, it really had no fruit, no finish and was quite past its prime - so disappointing, it almost makes me wonder if it was very good even in its prime! Wine did not get better or worse with time (1-2 hours). Appears to be in mid-to-late drinking window with maybe 2-3 prime years left. Delicious. Drink now. (3123 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
