Nose: strawberry, raspberry; beurre bosc pear, apricot, lemon. Waxy, honeyed, nougat. Pineapple?
Palate: strawberry, raspberry; beurre bosc pear, lemon, pineapple. Russet apples. Waxy, honeyed, nougat. Quite rich, but with linear, brisk acidity. Crunchy and fresh, but with some richness. Quite oxidative, I guess. Lots of persistent bead, overflowing when first opened. Maybe not as complex as some (bearing in mind that I'm an infrequent drinker of sparkling wines), but very nice. 12% alcohol. Seal: cork capsule.
DAY 2: left open overnight (& not properly sealed), now at (winter) room temperature (ie about 15°C). Still has some bead left, just. Rich, oxidative flavours are accentuated, eg mandarin, lemon marmalade, fleshy lemon, pineapple, russet apples, lemon curd. Still very nice, actually. Lovely, rich, oxidative style, run through with a lithe, persistent acidity. (2569 views)

Very simple and straightforward but not without charm, on the nose this offers fresh and clean aromas of green apple, lemon, white cherry, chervil, bread dough and toast. On the palate this is medium bodied with medium to medium+ acidity and a noticeable but not obtrusive dosage driving richer fruit flavors of yellow plum and toast. Tasty enough. (1999 views)

This is not really our style as it falls into more oxidation than we like. But, still enjoyable.

The nose reveals, bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon, white citrus blend, bread dough, baguette crust, nougat, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers.

The body & mouthfeel are nice. Bruised green-golden apple & Bosc pear, some apple cider, sour pineapple, lemon chiffon & poppy cake, cream, butter notes, white citrus blend, bread dough, warm toast, nougat with nuts, brown sugar spice w/ a little palate heat, vanillin notes, touch of butterscotch & caramel, sea spray, crumbled chalkiness, grey volcanic minerals, withering, yellow lilies and spring flowers. The acidity is good just not as lively as I like. The finish is rich, polished, well balanced and quite nice, just not outstanding.

Producer notes; In 1840, Jean Febvre, a barrel cooper from Montbard, founded the winery that is now Maison Simonnet-Febvre. It was exclusively specialized in the making of sparkling wines using the so-called “Traditional Method”.

Maison Simonnet-Febvre owns vineyards in Chablis, Chablis Premier Cru “Mont de Milieu” and Chablis Grand Cru “Les Preuses”. It produces and vinifies a large range of different wines from the diverse “terroirs” of the Chablis region.

Bubbles are quite fine and not very assertive. Tastes of golden toast, honey with apples, medium acidity and a hint of bitterness like lemon or grapefruit pith. Very approachable at €12 price tag. Medium nose of stewed apples. Palate with noticeable bitterness of citrus zest with slight minerality. Dosage 7g/l, but for my taste it is not very well integrated due to medium acidity.
Young 20 yrs old vines. Traditional method. Ageing 24 months on lees.

It is not any serious companion for food or an alternative for Champagne, though. The structure of the wine is firm, and the bubbles are lively. Palate is subtly off-dry with medium minus acidity and medium body. Good texture and weight. Palate largely confirms the nose although this wine has a slightly unpleasant bitterness, like citrus pith, that mars the otherwise solid finish. More dough and lees influence on the palate. Les vins de Bourgogne (Bureau interprofessionnel des vins de Bourgogne) (and in English)

Burgundy - The province of eastern France, famous for its red wines produced from Pinot Noir and its whites produced from Chardonnay. (Small of amounts of Gamay and Aligoté are still grown, although these have to be labeled differently.) The most famous part of the region is known as the Cote d'Or (the Golden Slope). It is divided into the Cote de Beaune, south of the town of Beaune (famous principally for its whites), and the Cote de Nuits, North of Beaune (home of the most famous reds). In addition, the Cote Chalonnaise and the Maconnais are important wine growing regions, although historically a clear level (or more) below the Cote d'Or. Also included by some are the regions of Chablis and Auxerrois, farther north.
