(3202 views) | | Tasted by xsivjosh on 9/4/2011: yum. Plenty of fruit. Suffiecient tannins. Better than required for the Chicken Mole. (2344 views) | | Tasted by BeaverBob on 1/1/2011 & rated 92 points: rather complex nose - very dark fruit, dark chocolate, black licorice, numerous other smells, all good and complimentary. not a massive tannin, enough to feel. long dry finish, as the label noted - it's dusty. ready to drink. per my wife "it's nice." this is a tremendous filet/prime rib wine. (2649 views) | | Tasted by pkbackman on 3/12/2010 & rated 92 points: Great wine. Smooth dark fruit is still in the forefront on this, with a touch of toasty oak. (1761 views) | | Tasted by knelsfk on 1/28/2010 & rated 92 points: Still drinking well; nose of smoke and tobacco; full body with smooth tannins; starting to exhibit some secondary flavors; long finish. (1972 views) | | Tasted by wineack on 6/8/2009 & rated 93 points: Beautiful cassis fruit and shadings of bottle bouquet and minerals. Rich without being overblown. (1933 views) | | Tasted by brouigu1 on 3/13/2009 & rated 92 points: Popped and poured and noted it was very tight. Light nose with just hinys of berry, leather and smoke. After decanting for40 minutes it opened very nicely! The nose was full with much stronger cherry and some chocolate and more hints of that earthy leather. Pared with a steak and new baby red potatoes and what a combo! Glad I have one more. I really enjoy the Rutherford Cabs. (2107 views) | | Tasted by brouigu1 on 8/10/2008 & rated 92 points: Consistent with previous notes... Drinking very well right now. Pared with NY steak and horseraddish mashed potato's and what a paring it was. Very full nose with fruit and slight smoke. Silky smooth with a soft but long finish. (2126 views) | | Tasted by greywolf10 on 2/9/2008 & rated 93 points: Strong deep rich aromas. Intense berry & cherry flavor with oak & chocolate/cocoa on finish. Very nice wine. (2259 views) | | Tasted by brouigu1 on 2/9/2008 & rated 92 points: Nice nose, though a little light at first. This wine was smooth with an earthy taste combined with light fruits and a hint of smoke. As the glass sat the nose became more pronounced and intense. This went very well with Italian food but will try another bottle with a NY Strip. I was able to purchase 4 more bottles and I am glad I did. | St. Supéry Producer web siteCabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet SauvignonUSAAmerican wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.California2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson Napa Valley Napa Valley Wineries and Wine (Napa Valley Vintners)Rutherford Rutherford,
