 Tasted by acyso on 3/9/2021 & rated 88 points: A very ripe nose, with a pronounced tone of honey as well as whiffs of sweetness. On the palate, I would have liked this a lot more had it been a little less hot -- you do get a good kick of alcohol on the finish here, but otherwise there are lovely flavours of sweet, ripe fruit, as well as a bit of honey. There is a mildly oxidative quality to this wine, but also there is plenty of salinity and a moderate amount of acidity to balance it out. A good wine, but perhaps a little heavyset for easy drinking. (2240 views)

Clear, golden color. Despite the color, the nose is plush with yellow fruit, ocean breeze, and a touch of petrol. There is a amber honey sort of quality on the finish that hints at the age, but it meshes incredibly well with everything else going on. The palate is briny with a combination of acidity and heft that creates an awesome balance. Salty, honeyed finish, with a bit of a rubbery note. As a previous note said, this is a delicious wine that doesn't necessarily achieve a better wine than a more youthful version, just different. Would like to try something in the 5-6 year old range. I see this as a wine that can be aged without detriment but also without enough gain to make it particularly worthwhile. I like it throughout its lifespan and think it is good value.  Tasted by bhouk on 10/21/2019: Going strong. I seriously doubt this will be better in another year or two and doubt it will be worse for the wear either. Drunk tonight with sea bass in a sauce with shallots, butter, vegetable broth and lemon juice that together were more magically delicious than pink stars, yellow moons and green clovers. I was a regular buyer of this savory, sea spray wine for a few years and then let it slip through the cracks. I’m getting back on the bandwagon. (1643 views)

Straight out of the fridge this smelled of wet stones, slate dust, and showed attractive bitter/salty/lemony mid-palate notes, but little distinction. As it opened (and warmed) up it gained fine, ripe star-fruit and a wonderfully unctuous texture, like a fine Wachau Grüner Veltliner Smaragd. 14,5% alc. well integrated. Light gold in the glass, this had honeyed aromas of melted wax with a subtle suggestion of well-integrated, lemon-curd-like oak. Gorgeous. In the mouth it was medium-bodied, with plenty of acidity and a riveting chord of wax, citrus, and cream. My favorite wine of the night! (2617 views)

 Tasted by Eric on 1/14/2014: Geeks and geeky wines with GeekWire (Bottlehouse, Seattle, WA): A slightly chemical note to the nose blows off to reveal an almost Marsanne/Roussanne sort of nose. Quite ripe at 14.5% and very mouthfilling on the palate. Savory and also quite juicy with lots of citrus flavors. It finished with mouthwatering acidity and simply begs for sun and Mediterranean food. (OK, in the middle of a rainy Seattle winter we can just dream of Santorini...) (3913 views)

Assyrtiko

Assyrtiko or Asyrtiko is a white Greek wine grape indigenous to the island of Santorini though it can also be found in other areas of Greece.

Despite the extremely hot and windy conditions of the island, Assyrtiko thrives. This is due in part because of the traditional koulara, a grape growing method that weaves the vine into a basket allowing the grapes to grow on the inside covered by the vine's foliage and protected from the harsh outside conditions. Vines are generally woven until yields are considered too low and nutrients to scare (around age 70) and are then clipped at their roots. A new vine is then grown onto the existing rootstock. This is important because the existing vines roots have grown deep into the soil to obtain the moisture stored in the pumice soils from the morning mists. It is estimated that many of the vines on the islands are centuries old which is made possible due to the island's inability to be affected by phylloxera since there is no clay in the soil. Because of the intense heat and lack of water harvest generally occurs in mid-August.

Wine style: Assyrtiko grapes clusters are large, with transparent yellow-gold skin and juicy flesh. Because of their weight and character, Assyrtiko is sometimes referred to as a red grape in white's clothing. In the volcanic soil of Santorini, there appear to be some unique characteristics that develop in the grape variety, and therefore in the wine. One of these characteristics is that Assyrtiko does not lose its acidity even if it is very ripe. After vinification, Assyrtiko develops a bone-dry grape with intense acidity and a strong mineral character which is perfect for pairing with Santorini's traditional fare such as grilled seafood.

The island of Santorini has three wine classifications: Santorini, Nykteri and Vinsanto. Santorini and Nykteri must be made up of at least 75% Assyrtiko and is it not uncommon to find a wine made up of 100% Assyrtiko.Nykteri, and sometimes Santorini, is generally a blend of Assyrtiko and two other indigenous white grapes on the island: Aidani and Athiri. Vinsanto is a sweet wine made of dried grapes and aged in oak for at least two years. It must consist of at least 51% Assyrtiko; the remaining percentage can come from Aidani and/or Athiri.
