Community Tasting Notes (average 91.4 pts. and median of 92 pts. in 215 notes) - hiding notes with no text

Tasted by TomFitz on 5/20/2021 & rated 91 points: A very nice mouth feel and structure but not much fruit left. I would say drink it now if you have it. (1165 views)
Tasted by grafstrb on 5/10/2021 & rated 89 points: -- decanted 45 min. before initial taste --
-- tasted non-blind over 2 to 3 hours --

NOSE: expressive; dark red fruits; hints of shoe polish and sweet black licorice; has that high-toned aged C.S. thing going on.

BODY: medium to medium-full bodied; dark red color with slight bricking throughout.

TASTE: sweet oak; a touch tannic; fruit likely falling away now, leaving the oak behind; "dark" (black licorice) when paired with steak -- the pairing was, to me surprise, poor. One of the longest-tenured wines in our cellar: I think this is already on its downslope. Drink Now.

Tasted by BBinSC on 2/29/2020 & rated 93 points: 92-94: feels fully resolved; really fine, surprised at the amount of red fruit I find; smooth, silky, quite tasty. Went fast - wish I had more! (1422 views)
Tasted by Thompsons on 12/30/2018: Still very good (1921 views)
Tasted by Millennial Drinkers on 1/1/2017 & rated 91 points: Tasted on day two. Very well integrated and softened. Solid dark berries on both the palate and the nose. A little bit of dirtiness ok the palate too. Moderate tannins (5.5/10) and moderate plus to full bodied. Lingering finish. Drink till 2018. (3592 views)
Tasted by Skip4wine on 12/31/2016 & rated 92 points: Fully mature. A cali style although with a tamed fruit profile but still mouth filling. Love this producer at this price point. 4 to 5 years left. At its peak now. (2568 views)
Tasted by cab blends on 12/30/2016 & rated 89 points: Pnp - Needs a little decanting (2652 views)
Tasted by Combo on 7/2/2016 & rated 94 points: Wow! Still fabulous! I was concerned this might be past peak, but it's not. I wish this wasn't my last bottle. (3148 views)
Tasted by AlexHop on 12/28/2015 & rated 93 points: Awesome. Lush and rich with plenty of great dark fruit still and a long finish. (3341 views)
Tasted by Frijole on 12/13/2015: dark inky red, little clarity, slight brickish hue
Nose: cassis, blackberry, sweet tobacco, vanilla, cola, clove, black pepper, smoke, ethanol, toasted oak
Pal: cassis, blackberry, sweet tobacco, vanilla, cola, sawdust, clove, black pepper, iron, smoke, tannins, toasted oak
Feel: full, savory, touch cloying
Finish: long

Tasted by andtheodor on 9/10/2015 & rated 89 points: Double blind. Raspberry, chocolate, ripe and sweet, seems refined and well made but not sure I like it all that much. Had to deny the substance but there just isn't the layers or complexity, just gloss. (2845 views)
Tasted by Doc90 on 9/1/2015 & rated 91 points: Tasted blind. Nose of potting soil, delicious caramel, candied red fruit, and plumeria. Spicy, peppery, and briny on entrance. Black currant, olives, and mossy earth. The funk blows off after an hour to reveal berries and graham cracker. I think I actually liked it better when it was a bit funkier, but there's no denying the fruit is ripe and extracted, and it is aging well. This was one that deserved more attention, and it suffered from sharing the stage with half a dozen other wines. (2308 views)
Tasted by snaff on 8/30/2015 & rated 92 points: Part of a blind tasting. Still bursting with bright fruit, and fresh black currant. Long finish with black pepper and hints of earth. (2046 views)
Tasted by stevenrcagle on 5/24/2015 & rated 93 points: Consistent with notes from 11/14. (1623 views)
Tasted by stevenrcagle on 5/24/2015 & rated 93 points: See previous notes. Fantastic cab, at its peak. (1514 views)
Tasted by MoreWinePlease on 5/3/2015 & rated 90 points: It's been a few years since I visited the '04 so I was thinking it was past its peak. Color of ripe bing cherry. Good aromatics.

Wow, this is one of the most port-like cabs I've had in the past five years. I've been a big fan of all Chappellet's red wines. Although the oak in this particular bottle has integrated, the abundant tannins let you know they're still there (not unlike a good port). Lots of black cherry, currents, some black berry dark chocolate and a little red raspberry. Not particularly thick but almost too rich. May be at peak or give it another 3yrs to see if it continues to knit. Some may find this a bit too much. (1390 views)
Tasted by stevenrcagle on 11/28/2014 & rated 93 points: Dark color, intense fruit on the nose, big, bold intense wine, silky, nicely structured, blueberry, raspberry, oak is there, subtle. Tannins rounded. Drinking very nicely, no signs of being over the hill, though may be at peak. Should be good for a few years. (2024 views)
Tasted by kcp on 11/21/2014 & rated 90 points: Still a bit young, surprised to say. Good, deep fruit. Tnnins are yet a bit dominant though not unpleasant. (1975 views)
Tasted by Night Train on 5/10/2014 & rated 92 points: Took to a party. My favorite out of 20+ wines, and any number of other people agreed. Dark, with no signs of age. None of the earthiness I detected on a bottle several months ago - just dark fruit and a boatload of pumpkin pie spices. Nice texture and a good finish. I love the way Chappellet Cabernets age - long and well - and this was no exception. (2717 views)
Tasted by Volunteers76 on 11/30/2013 & rated 92 points: Truly a great wine for it's price point. Should age for another five years. (3186 views)
Tasted by Joegish on 11/20/2013 & rated 90 points: Was worried about heat damage as this bottle had evidence of a small leak. No problems. Top shoulder fill, fresh fruit, balanced and delicious. Was a very good $25 buy. Glad to have another bottle. (3472 views)
Tasted by Rollerball on 11/18/2013 & rated 92 points: More dimensions, comfort, and amplitude than the '07 in a side-by-side. (2788 views)
Tasted by jimmyrice14 on 10/4/2013 & rated 93 points: Simply fantastic...last one too. Sucks. (2749 views)
Tasted by Rollerball on 9/22/2013 & rated 90 points: Deep and dense with medium complexity and just enough lift to keep it honest at the tip of the tongue. Yummy and without flaw. (2287 views)
Tasted by Night Train on 7/3/2013 & rated 91 points: Spontaneous pop and pour at the end of a party. Typical Chappellet (a good thing). Extremely rich and luxurious. Black fruit and pumpkin pie spice, but with a hint of earthiness I hadn't noticed with previous bottles. A francophile would think it was better for it, but I think it was slightly flawed, (2358 views)

2004 Chappellet Cabernet Sauvignon Signature

#27 on The wine spectator 100 of 2007

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

USA

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.

2021 vintage: "Unlike almost all other areas of the state, the Russian River Valley had higher than normal crops in 2021, which has made for a wine of greater generosity and fruit forwardness than some of its stablemates." - Morgan Twain-Peterson
