Stated with a leather and tobacco nose and raspberry and licorice flavors, with earth and eventually becoming earthy dominant. Silky mouthfeel…very elegant wine. But the third day it’s really excellent - smooth, somewhat lush, softened tannin, low-plus acidity. This is as restrained as Napa gets (on the third day anyway.) I’m liking it a lot, but the problem is on the third day there’s just not much left in the bottle. Too soon old, too late smart. (1320 views)

Wine #2. About an hour of air.

"More serious than #1. A hint of orange at the rim without much clearing. A nose of blackberry, cassis, some vegetable notes, vanilla. On the palate, acid was relatively high. Mix of black and red primary and secondary characteristics. Palate was a bit short at first but opened out throughout the night, more oak in the form of chocolate became evident on the finish as well. 2015 Napa. $80-100. 91. "Integrated nose of oak and blueberry pie. Just enough pyrazines to keep it attractive and fresh. Full body and dense palate. Cassis, dark druit. Finish is a black hole. So much vanilla, cassis. Loved the nose but this is as dense as it gets for the finish. Napa Cabernet without a doubt, probably 2016 because of power and integration. Probably a $100 wine for Napa but not my favorite style at the price point. Nonetheless very high quality. 91 but with air it’s falling off."

Nose > Red licorice, black & Morello cherry, blackberry, red raspberry, caraway seed, lavender, tomato leaf, menthol & smoked sage. Underlined by nice, slightly grainy, grippy, powdery oak; mostly non-American (or exceedingly well hidden)
Palate > Med/med+ bodied; not a Cali blockbuster by any stretch.
Red & black cherry, black plum, red & black raspberry, bitter chocolate with a touch of (unsweetened) Turkish coffee.
Tannins are med, with some nice grip, & at this stage ever so slightly over power the primary fruit.
Medium intensity. Good balance & acidity.
Nice combo of sappiness with some rich fruit, & slightly shading to the red side.
Nice stuff; solid, but not all that exciting.

Found this for $55, which in a world of rampant inflation screams value vs its peers. Only negative is alcohol still has some bite at 14.5%. Certainly open for business. (1312 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
