 Tasted by Mgb157 on 1/29/2021 & rated 87 points: Cork and color was great despite it's age. Very ripe plum, leather, pepper & smoke. Medium finish. Nice tannin and acidity. Should be fun to see how this develops as the bottle is open. (1358 views)
 Tasted by Wilbur1 on 1/4/2016 & rated 94 points: A huge surprise. Opened this up today and let it breathe for 6 hours. Not expecting the result: gorgeous! No hint of brown in the colour, sweet and deep fruit with a long finish. The benefits of appropriate aging for good Aussie Shiraz (its 73% shiraz) have rarely been more compelling! (4109 views)

 Tasted by markyc on 3/22/2013 & rated 89 points: A lovely Aussie Shiraz. Had the opportunity to decant for an hour before drinking. Had a small taste while decanting. Out of the bottle caused a little worry as it was a little hot. It was really worth the wait. Wonderful aroma of coffee, leather, and raisins. Chewy mouth-feel. Deep color, almost black. A great compliment to the beef roast with wild mushrooms. (6403 views)

 Tasted by brigcampbell on 6/3/2012: Russ visits Walt's and it's a Party of Five (Walt's House, Rancho Santa Margarita, CA): I was little critical on a previous note, but I enjoyed this bottle much more. Chris and gang really enjoyed it, one of her favourites of the year. Very dark, nearly opaque. Good nose of dark fruit and toasted oak. Palate of dark cherry, cassis, and more toasted oak. Very long finish, medium weight, and tannins still holding up the backbone. Wine held up to a hearty oso buco. (4094 views)

 Tasted by The Kokopelli on 8/29/2011 & rated 90 points: The Parsons Flat Shiraz is a deep ruby wine with a medium body. The nose is delicate, yet firm with blueberry, cigar and cedar. Fruity, round and generous with tastes of green tea, blueberry, ripe red raspberries, oak and a subtle backbone of espresso. The lively orange flavored acidity carries through the palate and on into the finish, while red raspberry, oak and blueberry fade slowly away in balance. The wine has a transparent structure, multiple layers and retains good balance at all stages. (3460 views)

Medium to heavy body, great nose of ripe fruit and great balance with a very smooth finish. I have had many more expensive wines that don't come close to this one, and up to now have not been a big fan of Australian Shiraz. (3258 views)
 Tasted by The Kokopelli on 2/5/2011 & rated 89 points: A Medium bodied with a violet purple hue. A nose of earth, sandalwood, tea and eucalyptus. Nicely layered complexity on the nose, but comes across as somewhat awkward. Round and generous in the mouth with tastes of ripe blueberry, black raspberry and some oak. Nicely viscous in the mouth with juicy acidity that kicks in mid palate with some orange pith. The medium length finish is orange pith, oak and bitter dark chocolate. The taste and finish more than make up for the odd nose, but some may have trouble getting past it. (3323 views)

 Tasted by cbbrown3 on 1/11/2011 & rated 89 points: Maroon color with lightening at the rim. Blackberries, vanilla, cherries, smoked meat, spicy oak, pepper, and a bit of chocolate on the nose. Full body with silky, smooth tannins and decent acidity. A bit soft on the palate but loaded with fruit and spice. Long finish dominated by chocolatey fruit with just a bit of pepper. Not very complex on the palate, but very tasty. I wouldn't cellar this for too much longer, perhaps a year maybe two. (3379 views)

Medium-full bodied with black cherry and blackberry fruit on the palate where it starts to more resemble an Aussie wine. This is decent, but probably one I will try and drink relatively soon. The wine is garnet to violet hued with a medium body. Velvety in the mouth with very fine tannins, tastes of blackberry and blueberry give the wine a soft, fruity palate. The medium finish has blackberry, vanilla and some oak. Showing decent complexity and well structured, this is a very solid effort from Parson's Flat. (3675 views)

Cabernet-Shiraz Blend

A very popular blend in Australia-particularly from South Australia, where the two varietals work well together. The most famous of these would be the Penfolds Bin 389, considered Australia's most cellared wine. In years gone by this was referred to as "Baby Grange" as some of the wine used barrels from the vintage of Grange.

The 2018 Paternus states only McLaren Vale Shiraz (no Cab Sav).
