Lots of character and tertiary development/ characteristics.

Hard to rate it higher this time because this was the second red of the night where the first red was a brilliant Shiraz that was consumed immediately before this.
Weirdly this seemed to make this wine come off as having a slightly funky flavour that I do not ever remember experiencing with this wine before.
I am torn on whether to open another bottle or to wait in case the wine is in a funky stage.
Although this may have another 2-3-5 yrs of cellaring potential, I don’t believe it will reward further patience. | Cabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley.
