Classic Atlas Valley Cabernet fruit. I would not decant, as the second half of the bottle after the 2.5 hour mark started to quickly decline and fall apart. I will drink my remaining bottles soon. Pleasantly surprised to find a richly dark purple wine, with solid tannins and notable acidity. Descanted for 30 minutes, then drank slowly with a sausage dog from a street fair (another story). This wine is impressive from the very beginning, and throws rich cherry, a touch of anise, and a strong dose of eucalyptus at you. The anise and eucalyptus stick around for a long and satisfyingly finish. Maybe the nine years of age help a lot here, but for the money this cab is hard to beat. As it mellows with time, it seems less like an in-your-face Cali cab and more like a fragrantly charming Bordeaux blend. | Cabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners.
