| Community Tasting Notes | | Tasted by kostaslonis on 6/29/2023: 10th MW Symposium, Wiesbaden - Day 1: Alcohol 15.1%, 0.3 g/l residual sugar, 5.9 g/l acidity, 3.81 pH Vineyard: Fruit Trees and Main Road blocks Grown on the historic flood plain country of Langhorne Creek above Lake Alexandrina which lends a maritime softness to the wines and avoids the heat spikes of inland regions. The Fruit Trees block was planted on own roots in 1972 and the Main Road block in 1997. Yield: 40 hl/ha Soil Type Deep alluvial soil with a high clay content. Harvest Notes: Picked on 31 March (Fruit Trees) and 9 April (Main Road).
Vinification Fermented in small open vats for 18 days. Basket pressed. Maturation In French oak barriques 16 months. Oak influence: 22% new barrels. Months in bottle: 10

There's a clarity of varietal expression combined with a rounded texture which makes it as natural as an old friend. The 2021 vintage is a beauty. The gentle growing season suited the Cabernet very well and produced a wine with bell clear fruit. Serve it in a big tulip-shaped glass so you can appreciate the aroma as fully as possible. There's impressive depth of flavour and a long, clean finish with firm tannins. Enjoy at any time from now until 2035.Noon Cabernet Sauvignon ReserveTHE STORY
The opulent Noon Reserve Cabernet – sometimes with a small proportion of shiraz – is picked from the Borrett Family’s low-yielding Fruit Trees Block, planted in 1972. Open fermentation and 18 months maturation in new (35%) and seasoned French oak barriques and hogsheads, give the wine deep‑set blackcurrant, cedar aromas, plush voluminous proportions and generous chocolatey tannins.
ESTABLISHED. 1976 TOP VINTAGES 2012, 2009, 2006, 2005, 2004, 2002, 1999, 1998. Not made in 2017,2013, 2011, 2010, 2008 and 2001.
Langton’s Excellent Classification
Cabernet SauvignonCabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.
Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace.
