Tasted by hajoha on 5/9/2024 & rated 92 points: Ulysse Collin Les Maillons 2012 base
Perfekt moden nå tenker jeg.
God dybde.
Sjeldent rødfruktet.
Strålende vin med pen frukt og ypperlig friskhet.
Tydligere røde epler får du ikke.
Flott fruktig finish. 92-93p (98 views)
Tasted by Cailles on 4/21/2024 flawed bottle: Deg. 02/16. Sadly, this bottle was corked. The nose was completely dead but on the palate there was so much intensity, so many layers of wonderfully balanced aromas, lots of tension that it overshadowed the TCA completely. I’m usually not in to the-more-vinous-the-better camp but this combined that celebral appeal and vinous complexity of great grower Champagnes with lots hedonistic pleasure and especially charm I often miss. A perfect combo. Despite the cork we almost emptied the bottle. This would have been easily a 96/97pts without the TCA.

TN: At first slightly, with time full-blown TCA aromas on the nose. On the palate there is so much complexity with layers and layers of aromas from caramel, toffee, to minerality in all shapes, dark berries and fresher zesty, lemony fruit. All delivered in UHD. Towards the finish some TCA comes forward and taints it. The wine is structured, yet ultra fine, highly elegant and balanced with a high freshness and very fine mousse. A masterpiece.

Decanting: Open and ready from the go, no decanting needed. (249 views)
Tasted by NostraBacchus on 3/23/2024 flawed bottle: 2012 base vintage, disgorged 2016. I was really looking forward to this, unfortunately a little corked. The TCA was more apparent in the nose, but then on the palate, the wine was still largely intact and would hint at its greatness. Just for the record, the bottle was almost empty at the end of the evening (and we had plenty of alternatives). So flawed, but not totally undrinkable, even for someone who is sensitive to TCA like I am. (679 views)
Tasted by Collector1855 on 3/23/2024 flawed bottle: Light cork, wonderful palate still. (611 views)
(524 views)
Tasted by salil on 1/26/2024 & rated 95 points: Rieslingfan visits Albany; 1/26/2024-1/27/2024 (Châteauneuf-du-Salil, Albany): Lot 12, disgorged Feb 2016. A deep coppery-pink color, and a wow wine from the first sip to the last. A savoury, incredibly brioche-y and toasty nose with a little oxidation, and bright citrus and strawberry fruit beneath. The balance and depth here are incredible, and this is a joy to drink over a few hours. (699 views)
Tasted by Rezy13 on 12/15/2023: Champagne Tasting $120+ (Bin 75 Alpharetta, GA): More golden color, definitely darker than the Boloree; golden apple, apricot, honeyed and rich nose, such weight and savoriness on the mid palate, a little natty in the way of some pickled apples but just an accent of interest, oxidative quality that seems to detract from some producers but this is great, weight and fullness from front to the finish; very good; interesting and makes me hungry for Asian food but I know it would work with so many things. (631 views)
Tasted by BillBell73 on 11/26/2023 & rated 97 points: Complex and slightly funky nose. Spice notes, fresh apple, ginger, and mushroom - a fantastic Maillons in its prime. The bubbles are fading a bit here so could be time to drink up if this bottle is representative. (527 views)
Tasted by jamesabdavis on 11/3/2023: Lots of red berries on the nose, bready yeast, Slightly and pleasantly oxidative.
Soft on the palate, very fine mousse, a nice chalkiness on the finish. Complex, lovely texture.
This is very distinctive and enjoyable but something tells me this bottle isn’t quite firing. There was a worrying cork smell at first, which blew off but there’s something just a bit pinched about it. I have a couple more bottles so will reserve judgement. (517 views)
Tasted by 5laton on 8/29/2023: This was back on form after my last bottle which was advanced. Right in the pocket, drink and hold. (511 views)
Tasted by 5laton on 12/29/2022: Disgorged February 2016. This presents as an older wine with a medium butterscotch color. Nose of oxidized butter, something floral. Palate is moderately developed with medium richness. Finishes with gentle fresh acidity which invites another sip. I actually preferred how this showed during the first 30 minutes versus a few hours after opening. If this is representative, it's totally in the pocket for my preferences (if not slightly past) and I'll accelerate my pace. (559 views)
Tasted by canan on 10/1/2022 & rated 94 points: 50th Birthday Tasting (Vesterbro): Tiny red berry fruit mixed with green apple and lemons. Vibrant and mineralic acidity balances the wine very nicely. Great wine and at a very drinkable plateau right now but it does however still feels very young and could easily age for a long time. Loved it! (1197 views)
Tasted by LWI on 9/11/2022 & rated 93 points: Late Birthday BYO: Blind. God modning på frukten, stor kropp, men en neste-kledelig nitterhet i finish. Noe fennikel, denne fyller ut hele munnhulen og har flott lengde. Lav dosage. En balansert og generøs champagne. Mener å huske at dette var 2012 base. (1374 views)
Tasted by Benoit Hardy on 9/8/2022 & rated 94 points: Dress already evolved and delicate bubble.

Nose of pear, honey and caramel.

Mouth with a magnificent touch, it is delicate but the wine imposes its presence naturally. The juice is full of life and appears in full maturity with a delicious complexity that the structure of the wine delivers by layer: black fruits, brioche then spicy. The wine ends with a very nice finish, long and salty at the same time.

Excellent, as often with Ulysse Collin, we could just blame it for a lack of breadth. (1283 views)
Tasted by 5laton on 7/15/2022 flawed bottle: Continuing the night's theme of off bottles, this was crazy dark in color (resembling Bourbon) and tasted like a 20 year old over-the-hill Champagne. There were bubbles and it wasn't dead -- in fact was rather enjoyable to drink, but there's no way this was Olivier's intention. I assume either heat damage or a bad closure occurred here. (957 views)
Tasted by FrankenWINEStein on 2/9/2022 & rated 94 points: Great Champagne. Initially muted nose. After 30 Minutes, beautiful hints of citrus, apple, caramel and brioche. On the palate, very fine and delicious bubbles. Long lasting , salty, mineral driven with good acidity structure. However the wine seems to be quite mature. Great producer! Love this (1505 views)
Tasted by asparagus on 1/2/2022 & rated 91 points: i am drinking these too fast. not a rose, but i note that with age (say around 5 years post disgorgement), these UC Maillons gain a light salmonish hue - have seen this across a few vintages.

on to the wine - this was somewhat muted upon opening and i suspected that it was corked or otherwise compromised. but it blew off after a few hours and it gave me red apples, slight honey and some almonds.

Good, but for mw, the weakest showing of this specific bottling - and i've consumed 7 over the years. (1559 views)
Tasted by RolfT on 7/30/2021 & rated 93 points: 2012 base. 2016 disgorgement.
Revisiting this champagne after holding off for 18 months since last bottle.
This is becoming more and more a mini-selosse. Nose, although still young and discreet, has a nice spicyness and sweet acacia honey tones as well as a slight cheesy note. The Selosse influence is most obvious on the palate. Wine has almost perfect balance. My only complaint would be that I'm missing a little volume in the wine. Easy 93+ points. (1703 views)
Tasted by bill00 on 5/29/2021 & rated 92 points: Copper hued. Red fruit and minerals. Rich but plenty of acidity to keep it in check. I have a personal preference for Collin's BdBs but this is really well done. disg. 2/18/16 (1635 views)
Tasted by vetty on 3/22/2021 & rated 92 points: m 2012 84 M. No 6/74. it's the 84 m special version. I guess its 7 years on lees ageing with crown cap since it has very floral aroma. maybe b/c the disgorgement date is 03/2020.

the nose was very closed at the beginning and began to show the floral fruity aroma after nearly an hour in the glass. bubble was very fine and smooth. (1762 views)
Tasted by asparagus on 10/28/2020 & rated 93 points: Showed admirably well in quite a stellar line up (Lafons, Bruno Clair). very fine bubbles and very persistent . A vinous champers. (1905 views)
Tasted by Derek Darth Taster on 10/27/2020 & rated 93 points: Burg theme lunch at TableAt7. Drank in Gabriel Standart.
Still just as good. Almost same tasting note as before. With additional saline minerality note and the sweet cream caramel on the palate a little more oxidative this time.
2012 base vintage. Disgorged 18/02/2016. (2002 views)
Tasted by psi on 10/14/2020 & rated 93 points: A beauty from one of the very best producers of Champagne imho. 93-94 (1159 views)
Tasted by hajoha on 9/26/2020 & rated 91 points: Ulysse Collin Les Maillons.
2012 base.
Litt "tung" på duft med røde modne epler, honning og Kongen av Danmark drops.
Tydelig høy modning i frukten her.
Her er vinen i sitt ess.
Ettersmaken varer lenge og vel.
Nesen litt skuffende, men derfra og ut består den med glans. 91p (2109 views)
Tasted by R.H. on 8/16/2020: copper tinged. chalky, stony, tensile. still quite tightly wound. should give my last bottle a couple of years (1654 views)

Pinot Noir

Varietal character (Appellation America) | Varietal article (Wikipedia)
Pinot Noir is the Noble red grape of Burgundy, capable of ripening in a cooler climate, which Cabernet Sauvignon and Merlot will not reliably do. It is unpredictable and difficult both to grow and to vinify, but results in some of the finest reds in the world. It is believed to have been selected from wild vines two thousand years ago. It is also used in the production of champagne. In fact, more Pinot Noir goes into Champagne than is used in all of the Cote d'Or! It is also grown in Alsace, Jura, Germany, the U.S., Canada, Australia, New Zealand, Romania, Switzerland, Austria, Croatia, Serbia, Italy, and so forth, with varying degrees of success.

Pinot Noir is one of the world's most prestigious grapes. It is very difficult to grow and thrives well in France, especially in Champagne and Burgundy. Pinot Noir thrives less in hot areas, is picky on soil, and deserves some oak storage.

Pinot Noir, or Blauburgunder / Spätburgunder in German, is a blue grapevine - and, as the German name suggests, the grape comes originally from Burgundy in France.

The grape, which thrives in calcareous soils, is used primarily for the production of red wine, and it is widely regarded as producing some of the best wines in the world. The wine style is often medium-bodied with high fruit acidity and soft tannins. It can be quite peculiar in fragrance and taste, and not least in structure - which may be why it is referred to as "The Grapes Ballerina".
Pinot Noir is also an important ingredient in sparkling wines, not least in champagne since it is fruity, has good acidity and contains relatively little tannins.
The grape is considered quite demanding to grow. The class itself consists of tightly packed grapes, which makes it more sensitive to rot and other diseases.

Pinot Noir changes quite easily and is genetically unstable. It buds and matures early which results in it often being well ripened. Climate is important for this type of grape. It likes best in cool climates - in warm climates the wines can be relaxed and slightly pickled.
In cooler climates, the wine can get a hint of cabbage and wet leaves, while in slightly warmer regions we often find notes of red berries (cherries, strawberries, raspberries, currants), roses and slightly green notes when the wine is young. With age, more complex aromas of forest floor, fungi and meat emerge.

In Germany, Switzerland, Austria and Hungary, it often produces light wines with less character. However, it has produced very good results in California, Oregon and New Zealand.

With its soft tannins and delicate aroma, it is excellent for white fish, chicken and light meat. For the stored wines you can serve small game. Classic duck breast is a matter of course, a Boeuf Burgundy and Pinot Noir are pure happiness.

Pinot Noir loses quality by over-harvesting.
Pinot Noir is prone to diseases, especially rot and mildew. Viruses cause major problems especially in Burgundy.
Pinot Noir are large round grapes with thin skins. Relatively high in alcohol content. Medium rich tannins and good with acid.
As a young person, Pinot Noir has a distinctly fruity character such as raspberries, cherries and strawberries.
A mature Pinot Noir, the taste is different. Cherry goes into plum and prune flavors. It smells of rotten leaves, coffee, moist forest floor and animal wine. This must be experienced.
In warm climates you find boiled plum, some rustic, little acid.
If the grapes are over-grown, the wine will be thin, with little color and flavor.

France - When it comes to wine, France stands alone. No other country can beat it in terms of consistent quality and diversity. And while many of its Region, Bordeaux, Burgundy and Champagne most obviously, produce wine as rare, as sought-after and nearly as expensive as gold, there are just as many obscurities and values to be had from little known appellations throughout the country. To learn everything there is to know about French wine would take a lifetime. To understand and appreciate French wine, one only has to begin tasting them. Click for a list of bestselling items from all of France.
Sub-Region:

Champagne - The French region of Champagne (including the cities of Rheims, Épernay, and Aÿ) was the first region in the world to make sparkling wine in any quantity. Today, the name of the region is synonymous with the finest of all sparkling wines, and wine-making traditions of Champagne have become role models for sparkling wine producers, worldwide. Surprisingly, the region of Champagne is now responsible for only one bottle in 12 of all sparkling wine produced. Styles of champagne range in sweetness ranging from an extra brut or brut 0, to the basic brut to demi sec to doux; some houses produce single vintage champagnes and others produce non-vintage (or incorporate wines/grapes of multiple vintages), often to preserve a specific taste; combinations of grape varietals; and colors, including a rosé. There are several sub-appellations, including the Valley of the Marnes river running from Épernay west, Massif de Saint-Thierry north and west of Rheims, Valley of the Ardre, the Mountains of Rheims (between Rheims and Épernay), Côte des Blancs, Côte de Sézanne, and Côte des Bar in the South. Champagne wine only uses three grape varietals (cépages): Chardonnay, Pinot Noir, and Pinot Meunier.
