 Tasted by Vinnut on 9/1/2020 & rated 93 points: Deep, dark reddish-purple garnet in color with clearing at the edges. Full, forward & fragrant nose of ripe fruit aromas of cherries, blackberries & cassis with overtones of classic cigar box notes of cedar & tobacco, earthy/dusty, herbs, some mint, coffee/cocoa, minerals, spices & a hint of oak/vanilla in the background. Medium-full bodied with a very good concentration of well balanced & silky smooth textured, ripe fruit flavors of cherries, blackberries & plums with cocoa, herbs, minerals, spices & a hint of oak/vanilla in the background. Long lingering finish. Drinks quite well at present with decanting & extended airing. At 15 years of age, it is close to or at its peak of development although it still may have some limited potential for further development if cellared properly. (1019 views)

Mid palate: cassis, chocolate, forest and soil notes, very soft tannins and round smooth finish, nice and long. Def in the right place now and would give 1-2 more years to drink this bottle before the fruit is gone. So buy buy buy if <$60 05' vintage. (2824 views)

 Tasted by sfowine on 4/12/2015: Bottle age has treated this well... nose still closed down even with 30+ minutes breathing. Palate is plush, very fine tannins that are well integrated. Blackerry and plum notes most prominent but with red currant and hints of tobacco to keep it from being flabby. Not heavy on the palate. Acidity quite low so I don't think I will hold the other bottles. Very enjoyable now. (3539 views)

The one thing I did not try was letting it breathe. Thought that given its age it would be good upon opening. Lacked the characteristic dark red current and spice that I came to love from Duckhorn cab. Seemed to open a bit after 30 min, but by then it was mostly gone. Guess the party guests didn't mind, but noone raved about it. Will try to a different approach next time and decant. Will report back. (3211 views)

 Tasted by emf on 1/30/2011: This was a very elegant wine that benefited from air and time. Dark red in the glass, with aromas of dark red fruit and a mild oak. Lots of sweet red cherries and plums with grainy tannins that smoothed out with time. This was very good with beef tenderloin. (2995 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
