 Tasted by thebonnydooner on 12/27/2010 & rated 91 points: Dark brick plum centre, brick cherry red rim. Nose is gorgeous, soft and sweet with loads of minty cassis cabernet fruit. Maybe a tinge of green with some air. On the palate this is dry but with a nice core of sweet blackcurrant fruit - tastes pretty full on the mid-palate, tannins are there but pretty much take the background to zingy plum and cranberry acidity. This note was taken on opening, maybe the acidity is a warning that this is cracking up, but it tastes pretty balanced and very tasty. (2761 views)
 Tasted by Bill Davis on 5/16/2007 & rated 88 points: I opened this bottle from my cellar with some trepidation.
While I have cellared it for some time I was hoping for something more than the Yellow Label and expecting something less than my fav the Black Label.
The label expouses the premium selection by Wolf Blass (the founder) of quality grapes from McClaren Vale, Langhorne Creek & Baroosa Valley, and 22month matured in Am. & Fr. Oak
I found this wine to be still tight and needing some air time.
Visual: Colour was full red; viscosity still intact.
Aroma: Nicely balanced between vanilla, oak, blackcurrant and mint, and perhaps dark chocolate bouquet?
Taste: Fruit forward and still having a middle bite (Langhorne character?), but only a short finish; perhaps cellared too long.
I enjoyed it with a sun-dired tomato, pesto and feta tortilla, but I suspect it would be better with beef or lamb. (3234 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon
