Very smooth, well balanced now at low tannins. some cherry, chocolate. nice lingering taste. Sorry it is my last bottle (1991 views)
 Tasted by BBinSC on 9/4/2016 & rated 87 points: This bottle is the last of my Maroon from 07, and I may have waited too long. Still fairly rich, but now has some herbal notes and some bite. It might be shifting to some secondary flavors, but I think it's just past prime.

I've had a bad feeling 07 was going to be like 97, and wines will be better younger. Will have to pull out some other 07s to find out. (2423 views)

 Tasted by maitredgreg2 on 9/3/2013 & rated 95 points: I've had this wine as a PNP, as a one day opener, as a 2 to 4 hour decant, as a 2 day tester, and by fortune a three day stopper. All of them bringing this wine above 92pts. But the latter so happened to be the best. My friend and I were testing the 2009 b Cellars B 26 Blend, and finished within 2 hours. He brought over the 2007 Maroon, opened three days before, which probably had 2 glasses poured from it with a stopper on. He left the bottle with me, saying that it may be done because of oxidation, and he left. Though, I was hesitant, and about to pour it out and try something else, I poured myself a glass, and wouldn't you know; WOW!!!! Everything that I had experienced with this wine on separate occassions, was brought to life with the first taste, Red Berries, Blackberries, Blue Berries, Currant, Light Oak, Spiced Box, Licorice, Chocolate, & Coffee, expanding to to a silky smooth, sweet berry tannic finish which lasted at least 40 minutes. This experience lasted until the last drop. 94+ The best QPR I've ever encountered. (3004 views)

Classic Napa cassis and some hints of cedar. Just a bit off balance on the finish because of the alcohol. Still very good though. Will buy again. 2012-2017 (2597 views)

It also showed a lot of butterscotch, which some people really enjoy in wine, but I don't. So take my rating with a grain of salt -- if you like butterscotch in wine, then add a couple points. Big wine, nice structural backbone. Some really nice Napa fruit, enough acidity, a bit heavy on the tannin right now. Spice, maybe a hint of herbs and black licorice. May improve, wish I had more than one left . 90-91+ (969 views)

Cabernet Sauvignon

Cabernet Sauvignon is probably the most famous red wine grape variety on Earth. It is rivaled in this regard only by its Bordeaux stablemate Merlot, and its opposite number in Burgundy, Pinot Noir. From its origins in Bordeaux, Cabernet has successfully spread to almost every winegrowing country in the world. It is now the key grape variety in many first-rate New World wine regions, most notably Napa Valley, Coonawarra and Maipo Valley. Wherever they come from, Cabernet Sauvignon wines always seem to demonstrate a handful of common character traits: deep color, good tannin structure, moderate acidity and aromas of blackcurrant, tomato leaf, dark spices and cedarwood.

Used as frequently in blends as in varietal wines, Cabernet Sauvignon has a large number of common blending partners. Apart from the obvious Merlot and Cabernet Franc, the most prevalent of these are Malbec, Petit Verdot and Carmenere (the ingredients of a classic Bordeaux Blend), Shiraz (in Australia's favorite blend) and in Spain and South America, a Cabernet – Tempranillo blend is now commonplace. Even the bold Tannat-based wines of Madiran are now generally softened with Cabernet Sauvignon

American wine has been produced since the 1500s, with the first widespread production beginning in New Mexico in 1628. Today, wine production is undertaken in all fifty states, with California producing 84% of all U.S. wine. The continent of North America is home to several native species of grape, including Vitis labrusca, Vitis riparia, Vitis rotundifolia, and Vitis vulpina, but the wine-making industry is based almost entirely on the cultivation of the European Vitis vinifera, which was introduced by European settlers. With more than 1,100,000 acres (4,500 km2) under vine, the United States is the fourth-largest wine producing country in the world, after Italy, Spain, and France.
