Brix: 25.6 at harvest, October 16th; Brix 24.6 at harvest, October 12th
14% Merlot, Clone 181
100% Diamond Ridge Vineyards, Clear Lake AVA
Inoculated with Anchor N112 yeast
Fermented on 7 g/L untoasted Alliers chips (to promote color extraction)
4 weeks micro-oxygenation pre ML to stabilize color and structure
36 months in neutral French oak
Alcohol: 13.5%, reduced to a “sweet spot” via reverse osmosis
TA: 6.1 g/L
pH: 3.76 at bottling
