2013 Littorai Pinot Noir Vin Gris

For our Vin Gris, a small portion of traditional saignée (tank bleed) method was used, along with whole clusters of Pinot Noir from the Cerise (21%) and Savoy (79%) vineyards that were soaked for 48 hours, followed by pressing. After completing native yeast fermentation, the wine remained on its lees in stainless steel for 4 months.
