They certainly don’t make ‘em like they did thirty years ago. Or at least, it doesn’t taste that way. The technique is minimal in the extreme; a light-press with the juice fermented in steel before six weeks on fine lees before a light fining and bottling. Medium/full palate, etched with pointed but natural acidity (a fraction under 7g/l). Grassy flavours dice with stones and rocks. Medium/long finish. Vat 1s under screwcap are turning out to have extremely long lives indeed. No exception here. Perfectly drinkable now, but with every promise of living for decades.
