  December 31, 2022 - Reticent at first. Herbal, sour cherry, fennel, thyme, bay and well seasoned oak notes. Subtle tea. Medium body with lovely acidity and thrust. LONG with lots of complex herbs on the finish. For me, Chianti is the king of food pairing for these savory notes and structure. This wine is on top from that perspective. Pretty perfect, although not yet as expressive as it may be with some time in bottle.
