  June 8, 2023 - Off the list at Passionfish, complementing the fabulous main course.
  
  Color/App: medium/deep yellow core with medium viscosity. Great, mature nose of lemon, peach, grapefruit with a touch of marzipan and as it sat, a little butterscotch. Superb balance and distinctly mature with great nervosity and palate presence; ready to enjoy now and over the next few years. Palate showing ripe, yellow apples with lemongrass, a touch of lime zest and a lovely, crushed seashell minerality. A perfect foil for the sea scallops in tomato-truffle butter.
