  July 27, 2023 - Fabesmontreal has written a good note on 18 February 2023. It surely is a gastronomic wine. Still a bit nervous, it will need some time to settle down. I never understood 'pairing well with pasta', as there are so many ways to prepare pasta: with salmon, truffels, carbonara, etc. My pairing (at this age) would be fiorentina (from DarioCecchini.com).
