  August 7, 2023 - Dianthus drinks like a red wine. Scented with whiffs of strawberry and raspberry, a bold palate of pepper and cranberry, somewhat like a light pinot noir.
  
  Made the mistake of serving this too cold and did not pair it well with the appetizer (pepper coated cashew nuts). Dianthus strikes me emphatically as a food wine, best served at about 50-60 F and more suited to fall-winter-spring fare than lighter summer fare. 88-90
