    April 18, 2024 - If there’s a Chablis village wine that I highly recommend, I will no doubt point you to Jean Dauvissat’s Chablis Heritage series. Tonight I had both the Chablis and Chablis Heritage side-by-side for comparison, it’s a great challenge. Heritage has a very soft and elegant aroma, like a warmly baked lemon juice. Content is also of very good quality, I noted the warmness and softness of the wine, which is very different from most Chablis. Technically, the vines that produced these grapes were 60 to 70 years of age, perhaps these vines are the game changer. Meanwhile, the Chablis version pales in both aroma and tastes. Aroma of minerals and stainless steel, while the content was much harder and stiffer with loads of minerality. It really paled when tasted next to Heritage. I strongly recommend you to try both bottles side-by-side, as I would classify Heritage as a Premier Cru level rather than a village level wine.
