  April 26, 2024 - Opened on 4/23, finished on 4/25. After exactly 48 hours open, it was still delicious. Opened to high levels of minerality and earthiness, with a strong pungent bouquet. After 24 hours, mellowed tremendously to the point where the tannins softened considerably and the flavor was quite enjoyable. Most certainly allow this to open for at least four to 24 hours.
