  May 9, 2024 - Koshu has many faces, and this one is almost Jura- esque (or Kimoto/yamahai sake-esque). Medium straw color with some haziness. The nose is somewhat oxidized and quite complex - persimmon, sake-lee pickled wasabi, green apple / apple cider, citrus, and dried pineapple. The mouth is dense - quite high acidity for Koshu with some prickling edge is counterbalanced by beer-esque yeasty rich body and a lot of skin-contact umami. Very unique. 89-90.
