    May 10, 2024 - Opened with trepidation due to age but was more than positively surprised as this was a truly sublime wine experience. The experience was ethereal in it being difficult to describe the balance and combination of factors that created this thing of beauty.

    The colour was fresher than expected with just a tinge of gold. The palate was dry with the smallest tinge of German Riesling style sweetness. There was honey but also fresh acidity framing. The flavours were more apple, peach with florals and herb. The mouthfeel had an alluring roundness of age but still well framed by the acid.

    Truly sublime and unique. It felt like some amazing combo of drinking a perfectly aged grand/premier cru white burgundy and a top shelf dry German Riesling.

    While I’ve had generally very good experiences with Salomon before, I suspect this was one of those unique ‘great bottle’ experiences. (Was a stelvin closure).
