Still retains that core of piercing acidity that screams muscadet but the bottle age seems to have rounded out all of the edges and added some viscosity... it adds a nice smooth note to the wine that perhaps makes this a little more flexible with food than a younger muscadet. Really long finish that lingers in the mouth. Paired it with green tomatillo tialpia.. went together quite nicely. A good wine that makes a case for cellaring a few bottles of the upper end muscadets every year.
