    June 28, 2014 - I waited a year to try the second bottle, as I found the first one too tannic for my tastes. This one was still tannic but much better. It had a very strong aftertaste as well.

    On day one I just had a glass on a pop and pour. The nose was a mess but the flavor wasn't bad. However, on day two the flavors had faded a bit but so had the harshness of the aftertaste. It was then that I discovered the secret: I paired it with a steak. I didn't notice the tannins at this point and found it much more enjoyable.

    I'll wait another year for the next bottle.
