Community Tasting Note

    January 27, 2018 - -Bottle served at cellar temperature (56°)
    -Cork in excellent condition, wine bleed 1mm-2mm
    -No decant
    -Color: Light Straw.
    -Nose: Light aroma-Lemon curd and ripe pineapple up front with oak later on.
    -Palate: Palate consistent with nose except ripe pineapple hitting first with lemon then baking spice with oak on the back palate.
    -Food Pairing: Paired with swordfish & butternut squash risotto.
    -Overall: Acts like a red in that it takes a long time to open up. Should decant 30-60 minutes next time so that it can open up and warm up a bit to get more of the subtle flavors which started to come out towards the end. Oak softened up over time and towards the end there were more flavors hitting all parts of the palate.
