Grilled Shrimp with Papaya Salsa on Crostini; Parmesan Pizza; Salmon Tartar

65% Syrah; 13% Caignan; 12% Grenache; 10% Mourvedre. Aged 15 months in oak barrels prior to release. Earthy aromas, very solid wine. The grenache really came to the forefront.

2003 Domaine L'Ostal Shiraz Vin de Pays d'Oc Circus France, Languedoc Roussillon, Vin de Pays d'Oc

Young and fruity wine--fun.

Slightly better than the Circus Shiraz - a bit stemmy and green, but fruit was the primary aroma and flavor.

2003 Roquette e Cazes Douro Xisto Portugal, Douro

Pronounced "shees-toe," this wine is named for the Portuguese word for "schist," a reference to the nature of the soil in the steep, terraced vineyards that rise majestically above the banks of the Douro River. Produced by Jean-Michael Cazes and Jorge Roquette, owner of the Quinto do Crasto estate. Touriga Nacional - 60%; Tinta Roriz - 25%; Touriga Francesa - 15%. Spends 18 months in 225-liter French oak barrels comprising 60% new oak and 40% used. 30,000 bottles anually. Very interesting wine--one of my favorites of the night. Hinit of earthy aromas with spice in the background subtly intermixed with layers of raspberries; red currant and blueberries. Nice finish.

Very good potential here, but tonight, it was very young and not ready. The complex tannins would seem to indicate a bright future for this wine.

Flight 2 - Pan Seared Sea Bass with Champagne butter sauce (2 notes)

White
2003 Château Villa Bel-Air Blanc France, Bordeaux, Graves

Very light and crisp wine. Had alongside the 2004 Blanc de Lynch-Bages, which was very good as well.

2004 Château Lynch-Bages Blanc de Lynch-Bages France, Bordeaux
89 points
Had alongside the Chateau Villa Bel-Air Blance, 2003. Prefered the slightly more complex Lynch-Bages--both very nice, crisp wines.

Flight 3 - Pan Seared and Peppered Beef Tenderloin with wild mushroom sauce and vegetables (2 notes)

Red
2003 Château Cordeillan-Bages France, Bordeaux, Médoc, Pauillac

I really enjoyed this wine--nice earthy aromas intermixed with black currant, blackberries and strawberries. Incredibly interesting finish--this wine certainly has a great future in front of it.

1998 Château Les Ormes de Pez France, Bordeaux, Médoc, St. Estèphe

Classic in style, but tasted next to the 2003 Chateau Cordeillan-Bages, which overwhelmed it. More tannic than the 2003--not sure it this wine will get better with age. Should have had by itself.

Flight 4 - Cheese Assortment (2 notes)

Champagne Grapes; Goat Cheese, Manchego; Whipped Brie de Meaux; Tellicherry Peppers and toasted croutons

Red
1995 Château Lynch-Bages France, Bordeaux, Médoc, Pauillac

Very fine wine. Tasted alongside the 1990 Lynch-Bages, which was somewhat unfair. Classic wine.

This wine was showing very well tonight. Simply the best Lynch-Bages I have had, thus far. Classic wine.

Flight 5 - Fruit Tart with Raspberry Coulis (1 note)

White - Sweet/Dessert
1996 Château Suduiraut France, Bordeaux, Sauternais, Sauternes

Nice way to end the evening. Amazing tropical aromas, followed by mellow honey notes. Very good wine, but not as complex as the aroma hinted.
