Dinner with Fellow Counsel

New Ubin Seafood

Introduction

A whole group of lawyers from various firms gathered for dinner to mark the end of the second-tranche in a major trial. It was a great time of hanging out and letting loose, and even though the night was lubricated more by whisky and beer than anything else, we managed to squeeze in a few nice bottles of wine as well.

Flight 1 (3 notes)

White - Sparkling
2002 Bollinger Champagne La Grande Année France, Champagne

This continues to impress. While drank in less than ideal conditions (too warm without proper glasses), it was still really enjoyable. The nose was classic Bolly, with yeasty, biscuity notes hovering over white fruited apple aromas and a sprinkle of lemon zest. The palate was still young and primary, but already approchable, with fine, creamy mousse and very bright, fresh acidity forming a fine frame for zippy flavours of sweet lemons and green apples drifting into a round, creamy finish. A very whole, complete Champagne. Nice stuff. I am not sure this will be the longest lasting vintage Bollinger, but it sure is a good one.

Rosé - Sparkling
N.V. Barons de Rothschild (Lafite) Champagne Brut Rosé France, Champagne
90 points
Actually really pleasant - this was quite a surprise. The nose brought to mind a Billecart-Salmon's Rosé, with strawberries and red apples aromas accompanied by a touch of funky earth and a little whiff of minerality. Very decent. The palate was pretty good to, with a fine bead and fresh acidity weaving through crsip flavours of strawberry and apples leading into a more citrussy, lemony finish. Nothing out of this world, but well-crafted and enjoyable, especially on a warm, balmy evening.
Red

88% CS, 4% Petit Verdot, 8% Merlot. Very good indeed, this was the pick of the lot, especially when paired with a nicely grilled Angus beef-rib. It had a really attactive nose, still influenced by sweet oak and vanilla tones, but what really stood out were ripe, sunny aromas of cassis and blackberries and plums seasoned with pinches of eucalyptus and wood spice, and nice wafting scents of dried flowers and roasted capsicums. I liked that. The palate was obviously still far too young to be fully appreciated, but even then, I found it to be surprisingly approachable, with ripe, slightly powdery tannins and well-integrated acidity forming a solid frame for lovely, deep flavours of cassis and blackberries sprinkled with more of that nice spiciness. Still primary, a bit monolithic, and the structrue gave the wine a good chewiness, but it had such superb balance and was so well-integrated that it was a real pleasure to drink even now. While certainly big, you would never have thought it hit the 14.5% marked on the bottle. The finish was especially impressive - long, powerful, yet effortless, with a lovely drift of peppery spice nestled amidst dark-fruited notes. Great stuff - this should be a joy to drink in 5-6 years and has the legs to go on far beyond that. A lovely Napa cab. 93+
