Introduction

Two techies walk into a bar, order a bunch of Sherry, and proceed to generate terrible and awesome startup ideas.

White
2008 Alvear Montilla-Moriles PX Fino "En Rama" Spain, Andalucía, Montilla-Moriles
Very light, elevated alcohol (15%) but holds it well. Nutty and oxidative with a bitter component. Salinity and slight tartness on the finish - malic. Short and not strong/long. Light and crisp.
White - Fortified
N.V. Emilio Lustau Manzanilla de Sanlúcar de Barrameda Papirusa Spain, Andalucía, Manzanilla de Sanlúcar de Barrameda
Slightly more yeasty than the fino (different flor?) and slightly honeyed (botrytis????). I don't think it's as good as the Pedro Ximenez or the first Fino.
White - Fortified
N.V. Alexander Jules Jerez-Xérès-Sherry Amontillado 6/26 Spain, Andalucía, Jerez-Xérès-Sherry
Light, crisp, saline, nutty, and dry - like a Fino.
White - Sweet/Dessert
N.V. Bodegas Toro Albala Marques de Poley Amontillado Viejísimo Solera 1922 Spain, Andalucía, Montilla-Moriles
21% alcohol and holds it well. Slight sweetness - maybe only 10g/L RS. Rich, nutty, and date-y, with suggestions of dried cranberries - almost red fruit. Great acidity and some salinity made this very enjoyable.
